About this recipe: Patha'r Mangser Jhol, or Bengali Mutton Curry is a classic Bengali mutton dish. On Sundays, in any Bengali neighbourhood in Calcutta one can hear the whistles of the pressure cooker going off. The smell of mutton curry fills the air. In this video we show another slightly more time consuming but superior method of cooking the mutton covered in a kadai over a longer period of time. The perfect cooked mutton should neither be too soft, nor too chewy. This method gives the cook more control over how far to cook the mutton. Additionally, it yields a "jhol" (sauce) with more body. This is because the process of conversion of collagen (present in the connective tissue of meat) into gelatin requires time. There is no way to fasten this process. Cooking the meat for about two hours creates more gelatin, that leads to a more viscous sauce that coats the mouth and teeth when eating.

এক নতুন পদ্ধতি শিখলাম পাঠার মাংস বানানো.....আমার বাবা সাধারণতঃ মাংসটাকে তেল ,পেঁয়াজ ,শুকনো লঙ্কা গুঁড়ো ও বিভিন্ন মশলা দিয়ে মেখে Marinate করে রাখে দুই ঘন্টার জন্য....তারপর কড়াই তে রান্না করে....পরশু রবিবার... আপনাদের রান্না গুলো আপন মনের মাধুরী মিশিয়ে এক অদ্ভুত স্বাদের খাবার নয়। বেশ আমার মা জ্যাঠাইমার আর তাদের মেনটর আমার ঠাকুমার হাতের গন্ধ পেলুম। সেই পুরনো খোশবাই, শতরঞ্জিতে গায়ে চাদর জড়িয়ে বাবা জ্যাঠামোনির সংগে বসে রান্না ঘরের মেঝেতে খাওয়া, আর পিসিমারা এলেতো কথাই নেই। বৃষ্টির সন্ধে বেলায় বাবা গঙ্গার ইলিশ পাতকো তলায় এনে ফেললো, আহা হা সবাই মিলে ঝম ঝমে বৃষ্টিতে সেই গরম ভাত আর ইলিশ ভাজা তেল দিয়ে মেখে ভাজা ইলিশ। সে যাই হোক দিন বদলেছে, শতরঞ্জি আর নেই বদলে সাহেবী টেবিল এসেছে, এসেছে হেঁটোয় বাথা, আর সবথেকে বড় অতোগুলো খাবার লোক নেই। শুধু তুমি আর আমি, ছেলে থাকে বাঙ্গালরে/গুরুগ্রামে। আর বন্ধু বান্ধব এলে আগে সন্ধে বেলায় তো গলানো সোনার মতন সিংগেল মল্ট তো একটু হাতে নিয়ে বসতেই হয়। আমি বলি যখন আজকে ভানুমতী দাসীর মতন মেনটর আর নেই তখন তো সেই ইউ-টিউবই হোল ভরসা। তাই সেখানে যদি রান্নার সেই খোশবাই বাড়ী না ফ্ল্যাটের পাসের জানলা দিয়ে ঢুকে পরে আর পাশের কত্তা একটু উঁকি মারে সেটাই তো বাজী মাত করবে। আমার মনে হয় আপনাদের রান্নার পদ্ধতি গুলো একদম মডুলার রান্নাঘরের জন্যে সময়োপযোগী সেই পুরনো কাসুন্দি বেশ ডিজাইনার বোতলে ভরা। চালিয়ে যান, আমার মতন কিছু মানুষ পাবেন যারা একদম প্রতিটি পদক্ষেপ মেনে রান্না করবে সেই পুরনো আস্বাদের লোভে।

আমি Spice Bangla'r রান্না আগে দেখেছি কিন্তু কয়েক টি কারণ এর জন্য ওদের রান্না আমার ভালো লাগে না:- ১. ওদের রান্নার পরিমাণ তোমাদের মতো নিখুঁত নয় যেটা রান্না করতে যাওয়া না পর্যন্ত বোঝা খুব মুশকিল। সপ্তর্ষি রান্নার ওজন grams এ দেখানোর যে যুক্তি টা দেয় সেটা অসাধারণ। ওদের চ্যানেল এ তা নেই। ২. রান্নার আগে মশলা পাতি বা সবজির processing দ্যাখানো হয় না যেটা তোমরা কর। যেমন ধরো, পেঁয়াজ বাটা বা পেঁয়াজ কাটা কি করে হলো তার কোনো উল্লেখ থাকে না। ৩. সব থেকে বেশি যেটা চোখে লাগে সেটা হলো ক্যামন একটা যেন তাড়াহুড়ো। সব মিশিয়ে আগুনে বসিয়ে ঘেঁটে দিলাম আর রান্না হয়ে গেল...! ৪. যারা আমার মতো রান্নার কিছুই জানে না তারাও তোমাদের রান্না দেখে রান্না করতে পারবে কিন্তু ওদের রান্না দেখে তা করা মুশকিল। I don't know... their cooking just feels weird.. whereas your cooking has a connection somewhere.. #YABEEful....কোনটা পেঁয়াজ বাটা আর কোনটা কাটা, সেটা যদি চোখে দেখে বুঝতে না পারেন, তাহলে রান্নাটা থাকুক, আগে চোখের ডাক্তার দেখিয়ে নিন বরং? একেবারে নিক্তি দিয়ে মেপে দিলেও জিভ আর হাতের ভেদে এক-ই রেসিপিতেও কিছুটা তারতম্য আসতে পারে। এটা কেন ভাবছেন যে আপনি/আপনারা যেভাবে রেঁধে অভ্যস্ত, সেটাই একমাত্র এবং নিখুঁত পদ্ধতি? আমেরিকা কিম্বা জাপানের কোন বাড়িতে বা খাবার দোকানে গিয়েও হুবহু কলকাতার চেনা স্বাদ না পেলে কি "weird" বলে নাক কুঁচকান? নাকি তখন মাথায় থাকে যে অঞ্চলভেদে চেনা খাবারেও কিছুটা ভিন্নতা আসবে সেটাই তো স্বাভাবিক? আপনার বাকি অভিযোগের উত্তরে বলি , "Tasty", "Tastemade" - এই সব চ্যানেলগুলোতে অনেক সময় ১-২ মিনিটের মধ্যেও রান্নার ভিডিও দেখানো হয়, নিশ্চই দেখে থাকেন আপনারাও। কখনও কোন ভারতীয়কে বলতে শুনিনি ওরা তাড়াহুড়ো করছে! এখন মনে হচ্ছে কারণটা হল সেখানে রাঁধুনিদের আসনে বাংলাদেশীরা নেই, থাকলে সেখানেও আপনাদের ক্ষুদ্রতা বেরিয়ে আসতো। আপনাদের সমস্যা কি জানেন? আপনারা মনে করেন বাঙ্গালিদের যাবতীয় যা কিছু, সব আপনাদের প্যাটেন্ট করা, সেটা রান্না হোক কিম্বা ভাষা। তবে আপনার একটা কথার সাথে একমত, আপনি রান্নার কিছুই জানেন না।

I made this on the weekend and it brought a tear to my eye: it was 98% as good as my mother's (who is no longer around). She would've super-charged it with ghee. :) Either way, this recipe and technique was excellent and I was able to create something so memorable. Thank you!
