This mutton curry is probably the most common style of mutton curry cooked in Bengali households. Early morning on Sundays and holidays, long lines appear in front of the neighbourhood mutton shops. Buyers fuss over the exact cuts and grumble about the rising cost of this delicacy. The quiet of the Sunday afternoons is punctuated by the whistling of pressure cookers, and the perfume of various mutton curries fills the narrow neighbourhood lanes. Didn't get mutton for Sunday? Not a big deal, but you are certain to regret it as the smell of your neighbour's mutton curry permeates your whole being.

♣️ In 2017, we posted a recipe for 'mutton kosha', a Calcutta cabin-style restaurant specialty, where the mutton is browned with a lot of onion-500g for every kilo of mutton-for nearly 3 hours to get a dish with deep caramel-nutty flavour and a thick sauce that barely coats the meat.

♠️ A year later, we posted the recipe of 'pathar jhol' a slow-cooked mutton curry where the mutton is first browned with onions-not to the extent that we did for mutton kosha and with only 400g of onions-and finally simmered until the gravy thickens and the meat is tender-about 2 hours.

♦️Today’s pressure cooker mutton curry is at the opposite end of the flavour spectrum in that we don’t want to brown either the onions or the meat too much. This keeps the flavours fresh and light. The sauce is runny because the quantity of onions is only 250g for every kilo of mutton and they completely melt in the gravy in the short pressure cooking time of 15 minutes. It’s absolutely hearty and delicious.

I have been an avid follower of your channel for years, and your "kosha mangsho" recipe whenever has been made by me, has always garnered me rave reviews amongst friends and family. In all these times, i have tried to add the same ingredients, in somewhat of a different order/different cooktime, and have tried to observe the difference it makes. Out of everything, the thing i found out that makes the most difference in cook time is when to add the curd. Addition of curd greatly delay cooking up of mutton, was my observation. The later we add curd the shorter is the cook time. On the other hand, the milk solids in curd, when caramelized, provides the deep rich flavor in kosha mangsho. And counterintuitively, the longer cook time ensures the mutton is not shredded by the time it darkens up. So, its basically a toss up between deep rich flavor and quick, light and fresh flavor. I believe in this recipe, you would have achieved the same cook time, even by braising the meat in its own juices in a kadhai( with a lid of course), only if the curd was added at a later stage. Note, exactly when curd is added, cook time of mutton will significantly lengthen. So add carefully after its almost done. Cheers! P.S. : My observations are drawn from my experiences with cooking, with my exact cooking setup, and the quality of mutton I get. I usually get the "choto pantha". Its not exactly scientific 😋

@@LA_02 America's Test Kitchen has a very nice video demonstrating the effect of marinades on meat and poultry. They basically came to the conclusion that marinades do not enter the meat beyond 1-2 mm below the surface. The only marinade that truly penetrates the meat is salt. Salt is essential. Rest flavor additives that we add (i.e. masalas and ginger/garlic etc.) have their main flavor compound as fat soluble. Hence frying them in oil produces the best result. As per my understanding, adding watery marinades actually hampers the frying of meat as it results in steaming/braising rather than frying. If a braise is the goal then a watery marinade is ok, otherwise not.

This is the one recipe that every Bengali household loves. Simple without any ostentatiousness. And I learnt to remove the excess oil from the top ! You have already whetted my appetite and I will be off in sometime to bring a kg of mutton from shop for tomorrow’s Dol/ Holi.😊😊

I find that the video keeps moving faster, so its quite difficult to keep reading the instructions. Your editing has been excellent so far. Onions cooking for 1.25 hrs! Did I see it correctly? Could the goat meat haven't been sauteed along side onions in that case and then transferred to cooker? Kindly enlighten us about the logic. We use PC to save time, isn't it?

Not just onions, the whole cooking process upto the addition of mutton takes an hour to an hour and fifteen minutes. That’s the actual time you need to soften onions and cook off the raw garlic, ginger and spices for best results. You could cut down on that time when you are in a hurry, but we are giving you the time that it took us. In our experience any way you choose to go, cooking mutton from beginning to end realistically takes two hours even with a pressure cooker.

You can. Just harder to show on camera what is happening in the pan with a pressure cooker. Also, we find it easier to properly stir in a korai.
