Basically the variable steering means more accuracy closer to the center so you've got more control over how much the wheels actually turn. But closer to full lock you have less accuracy so the wheels turn more with less steering input. Hopefully that helped some of you :)

Variable steering ratio: is a system that prevents people who don't drive well from messing things up at high speed by reducing the angle the wheel moves in respect to the steering input, because of course if you are driving in excess of 110mph you should be very gentle with the wheel unlike like when you are doing 50. however, if you are a good driver this is must certainly going to bug you because your steering inputs will always have a different result depending on your speed and sometimes even your slip angle because the car will decide for you and cars doesn't have eyes on the road. so if you know how to drive skip that option if possible.
