What ingredients do I need to make this Skillet Eggplant Recipe?
One or two aubergines.
1/2 liter of tomato puree (raw crushed tomato).
2 cloves of garlic
Mozarella cheese.
Olive oil.
Can I use fried tomato sauce?
Yes of course. Just cook the tomato sauce and the eggplants at the same time.
Can I use a cheese other than Mozzarella cheese?
Of course. Choose a soft cheese that melts well. Old cheese is not appropriate.
Is it essential to use olive oil?
No, use the oil you normally cook with. I use olive oil in my recipes because I live in Spain. I understand that it is not easy (or cheap) to buy olive oil in many countries.
I want to explain one thing: In the video you can see how to remove the bitter liquid from the aubergines. This step is not mandatory, however it favors the flavor of the recipe.
You can actually cook the eggplants directly in the pan, it will taste a bit more bitter. It's a matter of taste.
