2 SENIORS HIKE TO THE SUMMIT OF MOUNT ROGERS IN VIRGINIA AND WE'LL NEVER BE THE SAME! Come along with us as we share this entire experience. Best word to describe this trip... PERFECT! Perfect weather, perfect timing, perfect camping at Grayson Highlands, perfect hike and most of all... a perfect experience in the high mountains of Virginia as we hike from Grayson Highlands State Park to the highest peak in VA, Mount Rogers along the Appalachian Trail.
We were not sure we could make it to the top and once there we were not sure we'd have enough time to make it back down the mountain but we are glad we did it.

Poteat-tos Breakfast Tortillas
Ingredients
Flour Tortilllas
Butter
Peanut Butter
Nutella
Bananas
Strawberries
Preparation Steps
1. Prep Tortillas
2. Lay flat on cutting board
3. From the center slice to edge (middle to 6-o'clock)
4. To left of cut put peanut butter
5. Next fruit
6. Next more fruit
7. Last quarter section put Nutella
8. Starting with first section fold over fruit 1
9. Fold fruit 1 over fruit 2
10. Then fold Nutella section over this
11. Cook
12. Griddle or pan to medium heat
13. One Tsp of butter down
14. Place tortilla down and move around in butter
15. Flip when bottom is golden brown
16. Take off when other side is golden brown
17. Notes/FYI
18. Do not press down while on griddle
19. Keep toppings away from edges of tortilla
Bang Bang Chicken With Veggies and Rice
Ingredients
2 pounds boneless, skinless chicken breasts, (cut into 1-inch cubes)
1 tablespoon extra virgin olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 ¼ cups (290 g) mayonnaise
⅔ cup Thai sweet chili sauce
2 teaspoons Sriracha, (or more to taste)
2 tablespoons honey
Rice
Onion
Zucchini
Red Bell Pepper
Preparation Steps
1. In a large bowl, combine the cubed chicken breasts, oil, paprika, garlic powder, salt, and pepper. Toss to evenly coat the chicken. Allow to marinate.
2. In a small bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix well. This will make about 1 ¾ cups bang bang sauce.
3. Pour half of the sauce into a separate bowl and set aside to use after the chicken has been cooked. Use the rest of the sauce to brush evenly over the chicken.
4. Cut veggies into equal size slices
5. Heat griddle to medium
6. Chicken down for 2 minutes
7. Start adding Bang-Bang sauce over chicken
8. Cook your rice
9. Add veggies and cook
10. Remove chicken and allow veggies to get high heat for 3 minutes
11. Plate and serve

BAZINGA! We enjoy watching your travels, started watching when we were planning a trip from Mass to Florida and were researching state parks...starting with St Andrews. The serenades are always a nice surprise....were you in a band before? I started out as as a machinist and retired as a CNC programmer in 2023. But since I was a teenager I played in bands, I play keyboards. I retired from that on New Years Eve, a few weeks before everything shut down with covid. If you are ever passing thru Massachusetts and need a place to camp for a bit, we live in Western Mass, and have plenty of room. A few times each year we have campouts with our friends, usually Memorial Day, 4th of July, and Labor Day weekends and have 4 to 6 campers in the yard. Keep up the great work! Dave and Cher

Beautiful views! The ponies were beautiful too! That little rust color baby horse reminded me of another rust color baby horse that got the zoomies on the trail. I was watching John & Amy a few yrs ago. They were filming the beautiful view from inside their tent & all you could see was a rust colored flash fly by their tent & then it would flash across the front of it again. They were rolling. They came outside and saw that precious baby horse zooming everywhere. It was the cutest thing ever! Great video! Don’t think this one is going to flop! ❤

I'm soooo glad that you're taking us along with you. I'm no longer able-bodied to do any kind of trail. My absolute favorite thing in the world was early morning hikes. Wheelchairs and trails very seldom make a great combination. Your video hikes give me the ability to to see the things I've been missing for almost 2 years. We always enjoy traveling with you guys. We stayed at our first Virginia state park this summer and were really impressed. We used to hike a lot on the Georgia portion of the AT. BAZINGA!!! I did this hike in 2018. Got off the AT on my way back somehow and added an extra 2 miles!! The ponies are obviously the highlight of this hike!! I also enjoyed taking a long break on top of one of those boulders. That is a beautiful location to camp.

Horses can sense a good natured person like dogs can and they showed no concern at all. Not sure if you have this in your packs or not but if not please add a ace bandage and disposable ice pack in case of a twisted ankle. Your food looked delicious and enjoyed your campfire singing.
