This is so funny. I don’t know why KZbin algorithm gave this to me but thank you KZbin. The “chef” has clearly rarely handled food full stop and is massively winging it. I love his confidence.

This video is hilarious. It's doing the rounds on some chefs' blogs! You spatchcock a chicken down the backbone, not the breastbone! Fleur de Sel is rock salt! Love it. You have got to get this guy to do more, please 🙂

yeah.. no... there's no piri piri there. If you liked it in Lisbon why didn't you make it like they do? Piri piri is an infusion of a chili in oil. The chilis are called "malagueta" (you don't pronounce the "u" and it's a hard "g"). All the chicken needs is salt. Then after grilled it gets brushed with piri piri. That sauce is not Portuguese piri piri, it's more like Nando's piri piri, which has nothing to do with Portuguese, it's just cultural appropriation from a South African company (Love a Nando's, don't get me wrong, but it's not Portuguese). This is done because people are in a rush and piri piri needs a year or so to get infused properly. Try making the real thing next time.
