This is my favorite bean mix and have been making it for over 30 years. I make mine Cuban style using oregano, cumin, bay leaf, onion, green pepper, chorizo and lots of garlic. I enjoy watching all your tutorials and listening to your sweet voice.

@@shelleybrown948 Thanks! Here are the basic measurements. 1 tsp each of ground oregano and cumin, two bay leaves, one onion finely diced, 1/2 green pepper, 4 or 5 cloves of garlic, salt and pepper to taste and 6 or 7 inches of a good quality chorizo. I get mine at Costco .

Mary, you may not see this but I couldn’t resist adding another comment. Today is Feb. 15, 2021, with 7” of snow in my backyard-just finished brushing a foot of snow off the greenhouse here in central Texas. Totally unheard of here! Soaked my 15-bean assortment overnight and took ham hocks from freezer. Followed your instructions and soup just finished. Tasted it and it is SO wonderful! Instead of cornbread, my daughter made focaccia to go with soup. Sending blessings your way as we sit down to lunch.

The 15 bean mix is my all time favorite! I was deflated when i went to buy a pack at the beginning of the pandemic and could not find it anywhere. I made a pot with Hurst Great Northern instead and didn’t have any ham so just put in lots of aromatics and a bit of liquid smoke at the end. It was absolutely delicious! I truly love bean soup and have since I was a child. Loving your channel!

@@eielson1978 This channel teaches traditional cooking which mostly doesn’t use ‘instant’ products and certainly nothing that doesn’t list what is in it. I have made this bean soup and I do not use the pre-packaged seasonings either. I did open the seasoning packet, listed as Cajun Seasoning, and while I could tell some of what the spices were, I simply prefer to use my homemade Cajun seasoning as I know exactly what is in it and how long ago it was prepared. I would think if you use the packaged seasoning and are happy with it, that’s wonderful. We are all at different places on our traditional food journey as Mary mentions in lots of her videos.

After watching a lot of your videos I have observed what a fantastic teacher you are. Each video contains complete information for whatever the video is about. You have to repeat the same things so many times from video to video and you still have the same great smile and laugh. Kudos to you. Great instruction, so many others that I have watched just say maybe as an example, one teaspoon salt. You always go on to explain the difference in course and fine. Praise God I stumbled onto you before starting my fermenting. Heaven only knows what a mess I would have and I might have given up. Because of you I an totally enjoying fermenting and more. I have learned so much. GOD bless and thank you so very much.

Hi Andy, Oh my goodness!! I miss those pizzas - - - or pizza "pies" as we called them when I was growing up! You had two choices - a cheese pie or a pepperoni pie!! My mom is Italian and we would go to the pizza parlor together and I would get a slice of pepperoni "pie" and an Italian lemon ice. YUM!! And guess what? The pizza slice was 25 cents and the Italian Lemon Ice was a dime!! (This was in the 1960s.) I will try to re-create that but I'm not certain anyone can create those amazing "pies"!! Do you enjoy making traditional foods? If so, I have a playlist of some of my videos titled "Mastering the Basics of Traditional Nutrient Dense Foods Cooking". Gee, Mary, I love your recipes--just wish I could get into cooking the way you do. I particularly like your take on using the best possible ingredients (which I always have and still do), but you take it several steps further by investing your time and expertise in creating what I think would make me an excellent guest to appreciate your fare. But, I'm at that stage in life where the least amount of effort is my game. Still, I believe that if I listen to you often enough, eventually I just might get motivated enough to climb on the bandwagon. It's clear that you're an excellent cook but as I have said before, you have the most pleasant manner and your voice can be mesmerizing--in fact, it is, which is why I listen to you at least once a day just to get away from the constant news of doom and gloom. Yours is the only cooking show I subscribe to and lord knows I have listened to many, but for me, yours is the top. My words may appear to be sycophantic but I couldn't be more sincere. As Frasier used to say, "I'm listening." :) :)

I've tried buying all the different kind of beans and ended up with a bean bill of 26.89 really... and I didn't even get the smoked turkey legs! I just get those when our store has them or wings too! I love the way all the different beans cook and have a different texture. Great recipe Mary thank you as always you are my "Traditional Kitchen Cooking Hero !".. that soup looks amazing...

As far as cooking the dried beans before hand, many, many years ago I was making some bean recipe and cooked the dried beans in a tomato sauce thinking it would really flavor the beans. After 2 hours the beans were as hard as they were before cooking. The acidity kept them from softening. I learned a lesson.

I've actually used diced up salted pork. I add everything in at once (dried beans and all) let it cook in a crock pot til the doneness I like. Plus adding a diced carrot 🥕 gives it a whole other richness. I've even once done ladled it over cooked white rice or cooked barley & garnished with fresh chopped parsley. So good. Oh that flavor packet works great if you are using meats like turkey, chicken, shrimp etc

Hello Mary - thank you for this video. What are your thoughts on organic beans vs. non organic? I discovered ham hocks for bean soup years and years ago and I've never looked back at that old ham bone! So, so much more flavor in the ham hock. The meat is so moist and delicious. I never thought of using the ham hock bone for another pot of soup. I will definitely be trying in the future. Congrats on your KZbin award! Take care ~kendra

Hi Kendra, Thank you so much!! And oh my!! Ham Hocks!! They are the best!! I agree!! I never looked back!! And as to organic beans vs, non organic...yes, if you can find and afford organic, I think that's great. However, that said, I think what's most important is to buy the beans that are most accessible to us and in our grocery budget. I hate the though of folks spending more than they can because they feel they must get organic. In the long run...I think that's bad for the digestion. :-) Best to buy what one can afford, and cook and it serve it with love. Love, Mary

Mary, can I can this soup in the pressure cooker? What adjustments would I need to make?
@MarysNest4 жыл бұрын
Hi Melisa, Great question. I have not tried this in a pressure cooker. I would imagine that a lot will depend on whether you are going to pre-soak the beans or not but in general, I would suspect that about 30+ minutes on the high setting (as with an Instant Pot pressure cooker), might cook the soup. Love, Mary

If you are lucky enough to be near a Honey Baked Ham store you can buy a ham bone with alot of ham still left on the bone. We do this all the time and I keep 2-5 bones in my freezer. I thaw the bone and remove a lot of ham and then add it to the pot with beans (the ham I removed will be used for another meal. (often scalloped potatoes and ham)

A nice Picnic Ham cut into cubes works great. If you use the pressure cooker, don't add the tomatoes until the end. Just mix them in.

Definitely. After about 30 days, give it a taste. If it’s very tangy… Bingo… You know you have vinegar. If it still tastes a bit sweet or mildly alcoholic… Maybe along the lines of a very mild beer… Then you’ll want to let it go longer. Hope this helps. Keep me posted. Love, Mary❤️🤗❤️
