Shawarma is a Middle Eastern dish of garlicky meat or poultry served on pitas. Yo can use any type of meat: beef, chicken or lamb.
This meat is usually cooked on a vertical grill and then shaved off and used to make sandwiches.
Today, I want to share with you my recipe.
You will need spices:
2 tsp Cumin powder
1 tsp Cardamom powder
½ tsp Cinnamon
½ tsp Chili flakes
½ tsp Cloves(ground)
2 tsp Paprika
1 tsp Allspice(ground)
½ tsp Turmeric
½ tsp Ginger powder
1 tsp Coriander Seeds(ground)
2 tsp Onion powder
2 tsp Garlic Salt
1 tsp Black Pepper
1 tsp White Pepper.
For Marinade you will also need:
Zest from 1 Lemon
Juice from 1 Lemon
300 ml Club Soda or any unflavored carbonated water.
Notice, I did not use any salt, except Garlic salt, but you can use 1 tbs of salt in your spice mix.
For meat selection: I used Beef Sirloin Flap, but you can use skirt steak or flank steak.
Marinade the meat and leave it in the fridge for at least 5 hours(better overnight)
Using upright chicken baker pile the meat on top of the spit.
Romertopf Chicko: www.amazon.com...
Bake at 450°F(230°C) for 30 min at first, then shave off first layer of the meat and bake again for 15 minutes between each layer.
Put all shaved off meat in a container until ready to assemble Shawarma.
For Toum(Thomia)-Garlic Sauce you will need:
6 cloves garlic
1 tsp salt
2 tsp lemon juice
1 tsp icy water(if needed to thin out sauce)
You can use any vegetables you like in assembling your Shawarma: lettuce, onions, tomatoes, bell peppers. You can use pickles, but common pickled vegetable is turnip :www.amazon.com...
For bread selection use: whole wheat or white pita.
If you making this dish gluten-free, you can use leaves of lettuce.
Enjoy!
Thank you for watching!

I will see you soon!

Thanks for the recipe, btw, when you squeeze the juice out of the lemons, you actually have it up the wrong way, the inside of the lemon should be facing down towards the holes, the press thing presses the lemon inside out as it squeezes the juice out.

QUICK HACK: just buy swarma spice at mid-east grocer. if you don't have a grill, use cast iron skillet preheated to highest heat. sear the beef cut on both sides. cool, and thin slice. THEN, you marinate in a bowl with swarma spice,olive oil(olive oil will tenderize too). the meat may be a bit rare as it sits in fridge but can be heated again in skillet for use.(like stirfry)

I agree, you get the nice sear with dry meat, then the flavors of the spices. Marinades don’t really penetrate meat very far.

Will give this a try as I want my Shawarma to be more authentic without buying the upright turning spit. It may give me the edge in our small business for Shawarma as most people here are using mince meat fried in a pan. Would this technique also work for chicken shawarma?
@NastassjaCanCook
@NastassjaCanCook 3 жыл бұрын
Yes, absolutely. The turning spit is very expensive, plus you will need very good ventilation. This method can be done in the oven in smaller batches, so you can keep you shawarma meet freshly made all the time 😋

@icitrom 4 жыл бұрын
Seltzer is just water and carbon-dioxide (CO2). Club Soda contains a little salt and a little soda bicarbonate (baking soda). It's the baking soda that does the meat tenderizing. I'm guessing the water is just a vehicle to carry the soda bicarbonate around all the meat. I'd think that adding a little soda bicarbonate to the spice mixture would have the same effect.

Looks delicious! I'm a little confused though. So after the first 30 minutes, you shave some meat and put in a container. That meat is already cooked? or do you bake that meat too? Clarification please :)
@NastassjaCanCook
@NastassjaCanCook 5 жыл бұрын
Hello Yesenia. Yes, the first layer would be cooked and ready to eat. The reason I put it in a container, because I wanted to cook the entire batch first and then make sandwiches later.😊
