Honestly, something funny about that scene is that it isn’t necessarily totally random. During an earlier part of the fight, Tony is being thrown around, and he actually flies past the Shawarma joint. And it really is just like Tony to notice something like that while he is in the middle of a fight to the death, and just have it somewhere in his brain until he can use it.

You can use tahini and toum together, on either chicken or beef shawarma, or even a beef-chicken mixture. The important part is making sure it's actual garlic sauce, not some disgusting mayo version. If your garlic sauce uses mayo, it is NOT real garlic sauce.

Fun fact: when Tony gets sent flying down a street, about a few city blocks, if you pause or slow motion your way to the right spot, you can see a shawarma place. He had a split second to notice it, but I'm positive he saw it out of the corner of his eye, mentally logged it, and when he woke up and realized the fight was over, he was hungry, remembered the shawarma place, and figured "why not, it's on my mind, you never know when the next chance might come along, let's get some shawarma to celebrate saving the planet". And Thor seemed to enjoy his shawarma. Nice, big chunky bites. And Cap must have had a sore jaw (Chris Evans had a beard for his next film coming in, so he had to hide it from the camera because he was far enough along on it he didn't want to spend too long growing it back).

dude this isnt shawarma tho.... half of it is greek. what he made isnt tabbouleh (it should have less bulgur, no cucumbers, no spices, and lots of lemon), he made greek pita bread and tzaziki, and marinated the chicken in yogurt (without the random spiced it is used to make shish tawook - chicken kebabs). the reason people are mad at this is because its the equivalent to americans creating "fortune cookies" and passing them off as chinese when its a 100% american treat

Hell even in NYC it's likely there are 20+ different ways it's made. Take a breath and remember that dishes change based on where they are made. The only information the movie gives is "generic schwarma place in NYC" and I'm pretty sure Babish lives in NYC, so armed only with that info he made a recipe the closest to what he's tried there. Naturally it's not gonna be perfect authentic schwarma, same way that pizza (a New York staple) isn't going to be exactly how they do it in Italy.

Babish is missing way too many main components to this sandwich to qualify calling it a shawarma. This is just a chicken sandwich. Garlic mayo is key first and foremost. Tip: The shape of the stacks of meat is VERY important in getting good shwarma/gyros/doner. It needs to be a cone, the reason for that is because it makes the meat cook unevenly so that when it is carved you have a 'slice' of your meat that has parts which are roasted to a crisp and other bits that are still quite tender. The variation in texture and flavour are a key part of the dish, and the whole point of the cooking method chosen.

There’s so many variations of shawarma. I loved the Turk döner kebab I used to eat from my stint in Germany. Very different from the Greek donner. But they all share the basic structure: pita bread (named differently according to costume), shawarma/gyros/kebab barbecue, yoghurt based dressing, regional salad and seasoning.

I would recommend adding water, crushed garlic, salt, lemon juice, and optionally chopped parsley to your tahini sauce so it’s even more authentic like how they make it in the Middle East.

everyone in the comments is like "this isn't shawarma" and "you're not supposed to eat it like a taco" but there are no comments saying what exactly shawarma is and how you are supposed to eat it THE ANSWER SINCE THERE ARE HELLA REPLIES (edit 2): the most commonly agreed on thing is that real shawarma is more akin to a burrito (or a cone), not a taco like babish made/ate. the inside is a meat of your choice (most common red meat is beef, most common white meat is chicken) and the toppings vary depending on the middle eastern country; some say a garlic sauce, pickles, and potatoes, some say none of that and maybe ketchup or hummus edit: if you're not going to reply to this answering my question don't bother replying, I will report you otherwise I'm tired of the argument going on

Shawarma can be either chicken or meat. In the chicken it's served like a burrito with garlic sauce, French fries, chicken slices, pickles, and lettuce all wrapped by thin Arabic white bread. In the meat its served with tahina sauce, tomato slices, pickles, meat slices again wrapped by white Arabic bread. Its often drunk with fruit smoothies to go with.

In Lebanon, we eat chicken shawarma with toom, a thick and fragrant garlic paste. Tahini is usually reserved for meat shawarma and falafel sandwiches. Great job anyway!

The Shawarma Scene was done on the fly, it was not originally in the scripted but they ended up going more or less to hang out after work and eat it. It was so a humanizing concept after what they had done more or less in the movie that having time to blow off some steam they decided it was best to film and add it to the movie.

The word ‘Shawarma’ was derived from Turkish word ‘Chevirme’ which literally means ‘turning/spinning’. The meat was cooked horizontally against the fire for the first time by Turks of Anatolia in mid-1850s then quickly spread to the other parts of the Ottoman Empire, such as Greece, Balkans and Levantine. Iraqi and Lebanese immigrants brought this cooking method with them to Latin America in early 1900s, it eventually became Tacos Al Pastor.

For the tahini SAUCE that is typically served with Lebanese shaworma is tahini paste mixed with crushed garlic, salt, lemon juice/citric acid, and water. It should thicken into a nappe, and goes really well with shaworma, falafel, seafood kebabs, and used as a condiment for vegetarian dishes. Topping it with straight tahini is like eating a straight peanut butter sandwich, you always gotta chase it with milk lol.

I lived in Palestine for years (I'm from there) and this chicken was the closest I've had to shawarma style chicken since I came back to America. Please make this guys. The chicken recipe is ridiculously good. I recommend making/buying some shrak bread instead of pita bread, and dress the sandwich with toum (garlic sauce) tomatoes, pickles, and pickled red cabbage. You can just use all the stuff that babish made in the video (taboleh, tzatziki sauce) but I've never personally had shawarma with those toppings, so I can't vouch for the taste. I've also never had tahini sauce on chicken shawarma either (that tends to be more popular on the beef/lamb variant), but again, I've never tried it so it could be good. Amazing recipe.

I remember in high school a Welch girl I liked told me her grandmother used to make gruel for her and it was super tasty. What british call kebab is basically shawarma. (Or like, an extremely similar dish, i didnt tasted it myself) Though, we here on the israel call an entirely different dish kebab. Basically oval shaped balls of heavily seasoned ground meat on a stick. And its great. (Could be that the change of the name came from turkey and not from the UK. I didnt study it, just make an observation. Languages are odd.)

Well we call the the chunks of meat and various other foods grilled on a skewer a "shish kebab" but the same shish prefix is used for large chunks of meat in kebab shops, for instance the donor cuts are usually long thin cuts from the meat on the rotisery grill and the shish cuts are large chunks that are then cooked further on a normal grill. It's really weird to describe but it o my seems to be Turkish kebab shops that have that system

@@MazerTime Well Shawarma is just a copy of the Döner Kebab and so is Gyros. The original meat on a rotisserie grill is from Bursa, Turkey. The thing that Babish made can just be called Tavuk Döner and is actually the popular dish in the Turkish province of Hatay/Antioch, though they might add fries to that.

Shawna is more of a platter of beef or lamb & chicken with assorted grilled veggies like red, green and orange sweet peppers, onion, grape leave's, radish & pickles in a platter and is served with a garlic butter paste and is ate with hand's.... this is called a sandwich or wrap... and is served to white people that don't enjoy eating and talking with friends or family while sitting

Respect for actually making the tahini yourself from scratch. I guess that's why you wanted to use it directly on the sandwich. I would suggest you try and use it to make the very traditional tahini sauce by mixing the tahini with a bit of lemon juice (some grated garlic is also traditional) and then gradually adding water until it clumps (don't worry, just keep going) and then loosen up bit by bit. That sauce is a standard accompaniment to a lamb shawarma, while the garlic sauce you made with the chicken is the standard accompaniment to the chicken shawarma; at least in Egypt where I'm from.

The tahini we use on shawarma is not just that raw. We add white vinegar, black pepper, salt, cumin, lemon, and parsley. You soften it more with a bit of water. And worth mentioning, the tahini "sauce" that goes with fish is more acidic and zesty, than the tahini that goes with shawarma, flaflel or kebab. That raw tahini you made is often added on top of molasses.

yara alsayes homemade tahini is the only way to go. Always have some on hand.

The idea behind the "pocket" in the Pita is that you can put the food inside it, which makes it much easier to eat things like Shawarma (it won't fall out like when using the Pita as a Taco shell).

I was thinking something like: when Chef John will be Andrew's guest, then the video will be like a normal Andrew's video but with Chef John's voice describing the recipe. On the other hand, when Andrew's will be Chef John's guest, then a normal Chef John's video with Andrew's voice describing the recipe. So basically, something simple, but I think it would be amazing!
