Happy New Year 2025! Thank you for this recipe. I’m using it today for New Years dinner.I especially like that you do add more salt. This is how I like to cook with smoked meats also. I agree with you that there is already enough salt in the smoked meats.

Hopping John’s is usually cooked with the black eyed peas and rice all together in one pot. This is just black eyed peas but you can make rice to go along with the peas.

Onion is fine to leave in but chopped up celery or red bell pepper, !NO!! Plus, it takes more than an hour for blackeye peas. You cook them for two hours, not too high and then let juice thicken like a gravy

Celery and bell peppers can be a no for you but it’s a yes for me cater recipes to your liking my beans were done in one hour you may cook yours for two hours I don’t like my black eyed peas to turn into refried black eyed peas again cater recipes to your liking happy New Year 😊

Not to offend, but, Virginia cooks do not make it that way. Especially, my mom, my grandmother or my great grandmother when she was alive. Celery cut whole a couple of slices just for seasoning and remove when done cooking. Onions can stay. But, the blackeyed peas must have a thickening to it for the cornbread. I use turkey wings or turkey necks. In the 60's and 70's they fatback or hammocks. You are talking country women brought up on a farm. Everything fresh!!

Please don't forget fried Cat fish or trout and some collard greens, baby make you smack your mama. That's the midnight ritual in our house. A spoon full of blackeyed peas and collards for luck and go back to sleep. Wow, do I miss them days, a lot!!!!
