It makes me so happy to see that chef Ramsay has so much respect for Asian cuisine as well; all cuisines and cultures actually. And he's always willing to learn new things. Also learning about his background and everything he's gone through makes me understand why he's so strict in the kitchen and made me really respect him!

You have no idea how fast and delicious Chinese foods are, with a cleaver, a V12 stove and a big ass wok. Dishes will come out less than 2 mins

David Lee Chinese food is my favorite food. But if you go to the best Chinese restaurant, the wait for your meal can take 30 minutes...not including another 30 minutes waiting to get a table.

+Vette gaddia That's strange. The only time it takes 20 minutes to serve a dish in a Chinese restaurant is if it's steamed dumplings or steamed fish. Almost all the other dishes can be whipped up within minutes because of the crazy hot wok. Either that restaurant is really disorganized, or supremely understaffed.

reicirith If you go to the best and most popular Chinese restaurants, there will be a line to even enter the restaurant. I know, my record for the longest wait...2 hours just to get a seat in the waiting room in a Taiwanese restaurant. And an additional hour wait inside the waiting room. When we sat at the table, the food did all get there in 20-30 minutes. And we order 30 small dim sum dishes for a family of 8. BTW, we arrived at aroung 10:30 AM. It was great food, but never again.

+David Lee Not all Chinese dishes comes out in less than 2 mins. It's a generalization. Some needs hours of cooking and pre-cooking preparations.

Yeah, well Ramsay didn't work as a dishwasher and learn the language in China/Japan/India/SE Asia and study under top chefs from those places. He's also Western and mainly serves Western customers, so is sensitised to those pallets and tastes. I mean, what did you expect?

Right, many Asian dishes not only take lots of patience and a very gentle hand, but also years of practice in order to get it just right. Hand pulled noodles, for example- it takes lots of technique and so you need time to learn it. I'm sure given enough time Gordon Ramsay could do great though

you are correct, but I'm not familiar to how the ingredient fridges are positions in which on needs to walk around the fridge to give the ingredients to the chef. It's something new to me, maybe it helps with kitchen observation from the head chef when he's always facing the team.

@@aznbigboyjo3 really expensive to have another wok setup. London is super old. So this restaurant was probably a different restaurant before this family took over. Setting up another wok station probably cost them another $10k-$15kUSD when done with installation. Chinese restaurants are very hard to start, maintenance, almost every employee that's paid the similar salary need to pay attention to food quality because everything is prepared by chefs themselves. It looks like these guys are serving smaller portions of food cause that's how people in UK like it. Smaller portion with big plates for premium $$$. You can make decent salary. But with the amount of hours you put into it. You pretty much making less than minimum wage. And most days your chefs make more than the owner.

Joe jo I think it will be much harder for quality control if there’re 2 chefs. Chinese food isn’t as formulated as some other cuisines.

Very organized restaurant and delicious chinese dishes from the looks of it. Asian restaurants, chinese diners in particular are very quick in their service, and food gets on the table really fast. And I can see that Yu & You really fits the description and criteria of being an authentic chinese restaurant.

The reason why only the dad handles the pot is that Chinese dishes require very deep knowledge of the temperate during frying, aka, 火候. And it requires a lot of skill stirring during frying, otherwise it won’t cook perfectly evenly. It’s not like cooking a steak where you can just say 3 mins for each side and turn over. When and how and how long is up to the chef’s experience, it takes decades to aquire them.

Roger Lee when i say chinese food im talking about traditional chinese restaurants, not chinese takeouts etc., in australia the food is infinitely better, especially in suburbs where close to 90 per cent of the people are chinese. i dont know if you have chinese dominated areas in the us, but in australia, the recipes are the same, but with higher quality ingredients.

probably a tradition from ancient china: only the most esteemed chef will handle the dishes, especially in the palace where the head chef is directly cooking for the emperor himself! but even in lower class restaurants this is still evident, there's a sense of prestige and importance when you're the head chef, which is why (i think) charlie insists that he does the cooking himself.

Chinese restaurants are quick because every ingredient is prepped and ready to be cooked in the wok. This is how stir frying works, 90% prep, 10% cooking. While, Dim Sum requires steaming, which can take a long time for the chef to make a new batch of dim sum. That's why in most dim-sum places, the server is pushing a cart around full of dim sum that's already made.

Fyi all of you complaining, this is actually how chinese restaurant's kitchen works... Head Chef(s) - does the cooking mainly (can have more than 1 person depending on the size of the restaurant) 2nd Chef - somewhat like an apprentice, but they cook small dishes, and can replace the head chef in certain situation Assistant - handling the knife, he/she will prepare the ingredient for the chefs Normal workers - basically washing the ingredient, cleaning and what not...

That's traditional way of cooking in china taught at culinary schools. One guy operates the wok and sauces, the other one cuts vegies and meat. It's also the fastest way to cook as you are constatly reducing the temperature of wok with water and new ingredients so it doesn't start melting over the gas burners.

Kind of like how Malaysian make Portuguese Chicken dishes, or how Alsace serves a lot of German food. It's a reflection of the region's history. *shrug* Still damn delicious. lynda farren Depends. I live in Lancashire but I'm near Manchester and the accent is pretty different from a regular Lancashire accent. The Lancashire and Yorkshire accents are quite similar though.

There is one big chef, who cooks everything there is one "2nd chef" who watches and learns and only cooks if the big chef is very ill there are people who put the raw ingredients together there are people who cut, wash, prepare the ingredients and the servers

fuck off mate, my parents own a chinese restaurant, we always have three chefs cooking and two people chopping veg and meat. The guy in the vid simply doesnt trust anyone else to cook. The fact that he has someone else to prepare the amount of sauce and veg that goes into each dish is weird in itself, chinese chefs usually do it themselves. If you're not on the wok or cleaver, you might as well not even be in the kitchen.

Its odd how many of the people who come from the Asian region seem to have similarities in their English speaking mistakes. It's like they are trying to speak the English language but they are so used to their first language that they carried over the same expressions they had while speaking their first language to use while trying to speak the English language. It's actually quite interesting

that actually applies to all second language speaker. Your first language affects the way you learn and speak your other languages, so the "mistakes" (or sometimes called vernacular) when learning foreign language are often very consistent across people with the same first language.

Ramsay should learn to respect the way people work in their kitchen; 1 person get the ingredients, another person prepares the sauce, and finally the chef receives those ingredients and sauce and stir-fry them. It's an organized, systematic way of doing things. No one is more important or lazy, all persons have an equally important role to play and one can't do without another. Why can't Ramsay respect that?? So in Ramsay's own world, anything not pleasing to him is wrong?? Ramsay really needs to learn to respect personal freedom and not demand everyone to conform to his commands and opinions. Yes, he is a 13-star chef but no big deal, he doesn't earn the right to behave like Adolf Hitler!

You would think so, but you should remember that there are as many Chinese people throughout the world as are in China. The ancestors of those people brought their traditions with them, and speaking as a Chinese ethnic myself, we have a very strong sense of tradition which means we maintain our culture wherever we go. There are Chinese ethnics all over the world, cooking Chinese food as well as or even better than many in China itself. Even the Chinese say so; busloads of Chinese tourists come down to my part of the world (Malaysia/Singapore) just to try the food. The ingredients you can get in many parts of the world are sometimes even fresher or better than in much of China (particularly outside the major cities). The other interesting thing is that the food also evolves a little to become something a China Chinese would find familiar but also different. American Chinese is a good example of that; people make fun of how kung pao, chow mein and fortune cookies are American inventions, but it's not exactly true. Those dishes did exist, but different ingredients and cooking style has evolved them over time. Just because it's not authentic, doesn't mean it's not "Chinese". The other thing to remember is there is no such thing as just "Chinese" food. Every region is different. A lot of these stir-fries that you're seeing are typical south Chinese, Cantonese, Hokkien or Teochew style, very light and fresh, a lot of shallow-frying, clear broth, not a lot of spice (this is the region where the most emigration took place, so most Chinese food around the world resembles this style). I am a Hakka, and we braise and stew a lot of things using lots of herbs and cuts that most other Chinese wouldn't, like chicken feet, offal, belly pork etc. Szechuan and north Chinese deep-fry a lot of their food and add a lot of spice. Central Chinese (Huaiyang) use a lot of vinegar and hardly any spice, and being from the major river basins use a lot of fish. So even within China you cannot compare across cuisine, you must match the regions. And every single one of those regions have influenced people around the world for centuries. My family has been away from China six generations, and we still enjoy food that would be recognisable in our ancestral region, passed down by all the generations. We have had guests come from mainland China, my grandma cooked for them and we also took them out to restaurants in town, and they now come back every two years just to eat the food!
