Ingredients you'll need:
-1 Yellow Onion
-2 Green Bell Peppers
-3 Celery Stock
-6 cloves of Garlic
-1 Cup of Flour
-1 Cup Oil (High Smoking Point)
-1 Cup Beer (Anything but light)
-8 cups of Chicken Stock
Spices & Herbs
-1 Tbsp Cayenne Pepper
-1 Tbsp Cracked Black Pepper
-1 Tbsp Fresh Thyme
-1 Tsp Cajun/creole seasoning (Tony Chachere’s)
-1 Tsp Old Bay Seasoning
-2 Tsp Salt
-4-5 Bay Leaves
Meat
-1 Lb Chicken Thighs
-2 LB Andouille Sausage
-Seafood is Optional
Steps

First Start by Chopping up (The Holy Trinity) Onions, Bell Pepper, and Celery. Don’t forget the pope (the garlic).
Season both sides of the chicken thighs with salt and pepper. Heat up the pan to MEDIUM, pour 1-2 tsp of oil and let it sear until golden brown on both sides.
The Roux (DON’T WALK AWAY FROM THE ROUX)

Heat up a pot to MEDIUM heat and pour 1 Cup of Oil. Once the oil is smoking, add 1 cup of flour and stir until you reach a Hershey brown color.
(If your heat is too high the roux will burn and you have to start over)
Add in the holy trinity and stir until the onions are translucent, then add in the garlic, sauté for 1-2 minutes. Add 1 -2 cups of beer to make a gravy and stir vigorously until the alcohol is evaporated.
Slowly pour in the chicken stock and stir. Add in all the spices and herbs. Mix it into the roux.
TURN UP THE HEAT TO (MEDIUM HIGH)
Once the gumbo is BURBLING add in the chicken and sausage.
Lower the heat to SIMMER (LOW)
And let it sit for 1.5 to 3 hours. (Stir every 15-30 minutes).
Serve with white rice and garnish with green onions for that EXTRA flavor.
