Thank you! A great chef once told me that "if a dish isn't working out then try removing an ingredient". It's something I consider whenever developing recipes because fewer ingredients also makes the preparation simpler. This one does have a quite a few components, but it's slimmed down from my initial versions and I kept only the ingredients that make a noticeable impact on the final dish.

With what proteins do you prefer the dark / white Shao Xing wines ? I have been given both but every time no one every says which one to use. I’m not familiar with these since my mom is Japanese & not Chinese so I didn’t grow up with them.

I think the clear one is Mijiu, which is the Chinese equivalent to sake. It hasn't been aged so has a much milder flavor. Shaoxing on the other hand has been aged so it's more like Mirin in flavor (though not as sweet). I tend to like Shaoxing in most Chinese dishes better because it has a more pronounced flavor that doesn't get overpowered by the spices and aromatics used.
