I think it works the best as a filling for mousse cakes! It might work as other cake fillings though! I would add the amount of gelatin depending on how heavy the cake is.

Good question! The texture might get slightly looser with orange juice but I think it’s possible! You may want to reduce the sugar for the curd a bit since orange juice is sweet. You also might want to add more orange juice to taste bright orange flavor, and add a bit more gelatin instead. Or you can try with the same amounts and see how it turns out!😉

I’ve never tried it with vegetarian gelatin, so I’m sorry I can’t give you the exact answer for it. But it’s possible to make it without gelatin if you don’t mind the mousse getting softer.

I make whole egg lemon curd and add equal amounts of it to whipped cream like 1 cup curd to 1 cup cream. I got the idea from a recipe for lemon trifle from Taste of Home magazine. I’m sure the meringue tastes great but for the lazy cook like me it’s too much work.
