My mother, who was not the best cook, made the world's best matzo balls! She said her secret was to separate the eggs & fold the beaten whites into the yolks - a task I'm just not good at. Then she cooked them in the chicken soup to flavor them. I'm getting a cold right now so I think it's a good time for me to make some chicken soup with matzo balls - this time using seltzer! so if you follow the recipe directions to the T it really should work - but I would say the most important steps are 1. make sure the mixture is firm when you take it out of the fridge -- it's quite alright to leave it in longer than 30 minutes (even a few hours) 2. roll into a small tight ball about 1-inch in diameter 3. make sure the water is NOT boiling but rather simmering when you drop them in and then cover the pot 4. do not overcook 30-40 mins is just right - GREAT LUCK!

Not Jewish, but I LOVE matzo balls! I use chicken fat instead of oil (I know, not so healthy, but they taste so wonderful!), In fact that's what I'm fixing tonight, with broth made from chicken thighs boiled with carrots, onion, celery, garlic. I disposed of the cooked-out veggies after a couple of hours of cooking, added some of the chicken meat to the broth, added new carrots/onions/celery, a little salt, and it's heating up to be ready for the matzo balls - made the matzo mix awhile ago and it's in the fridge, ready to be formed into balls and boiled in salted water----YUM!

What goes perfectly with this matza ball soup is the what we call bar Mitzva brisket in this house. Line a throw away deep baking tin with about 3 large onions cut into rings, add a 6 lb brisket, (NOT corned beef) then add 2 bottles of Heinz chili sauce. ( it’s in the ketchup isle) one can of dr. Pepper or root beer. Cover with foil tightly set oven to 375’ for 4 to 5 hours. Don’t peek during cooking. Remove brisket cut on bias add back to sauce and onions and turn off oven return pan to keep warm till your ready to serve. So easy. So fail proof you’ll wonder where it’s been all your life!!!! Enjoy!

I might try that with a small tender skirt steak for 2 people, but who the heck can afford BRISKET anymore, since most don't come in 6 lb weights. What else is on the menu?

I knew this old Jewish woman that I helped out , celebrated holidays ect and we pretty much became family to the point she referred to us as her adopted grandkids .She used to make mozo balls and make us this spice tea that would kill anything that dared to get us sick. She said it was easy to digest but also had all the vitamins and minerals. The tea also gave a good kick in the butt
