►Ingredients for the Moroccan Chicken
1 large whole chicken
2 tbsp. ras el hanout spice
2 garlic cloves
3 tbsp. sunflower oil
►Ingredients for the Ras El Hanout Spice Mix
2 tsp. ground ginger
1 tsp. cumin
1 tsp. cinnamon
1 tsp. coriander
1/2 tsp. turmeric
1 tsp. black-pepper
1/2 tsp. ground cardamom
1 tsp ground cloves
1 and 1/2 tsp. salt
►Ingredients for the Couscous
3 tbsp. sunflower oil
1 tbsp. sultanas
10 - 12 prunes
1 cup couscous
1 and half cup water
1/2 tsp. black-pepper
1/2 tsp. salt
1 tsp. ras el hanout spice
12 - 15 olives, use good quality ones
2 tsp. tabasco

Working in my attic today while this was cooking. Could not stand it, had to knock off early. This is the most amazing chicken I’ve ever cooked. I had some home made preserved lemons ready to go so added them to season the chicken overnight. And moved the lemons inside the chicken before cooking it. I used all raw roasted spices for your Ras el Hanout recipe. The couscous turned out phenomenal prunes, sultanas, olives, Tabasco and all. You weren’t kidding about this being the best everTagine chicken. Nearly chewed my fingers off. It rocks! You’re the boss man👍👍👍

This looks amazing! So glad you included the spice mix recipe! Made it tonight, it was so full of flavor! Family ❤️d it.!( I used Mahatma yellow rice and added your spice, raisins and pine nuts. It was also great!)

Please explain what you mean by your seasonings have already been toasted? I have all of these, but I have to pre toast them or can they toast on that meat?😳

If you got while spices, warm them up in a pan and then ground them

As you say, Morrocan cuisine is one of the best (apart from Mexican). I loved that if you bought ready-made ras-al-hanut, the vendor would remark sardonically that it was only purchased by wives who could not cook!

220 Celsius is 425 Fahrenheit. I’m concerned it will be dry if cooked for 90 minutes. Any thoughts?

This temperature is for a large chicken. If you have a medium size chicken then cook for 70 min. 1 hour for a small chicken.

What does halal mean again?

Halal basically means permissible. i.e. if the chicken/ is stunned or slaughtered by electrocution then as a muslim you shouldn't eat it. If it is slaughtered with a knife while saying "with the name of God" then it is okay to be consumed and it is halal.

What temperature (F) and how long would it need?

430F. Breasts usually take around 50 - 55 min. Internal temperature should reach 160F or until done.

1 - 2 hours at least and keep them whole but do shallow cuts across.
