When I make any type of Mexican dishes or casseroles, I make oven baked tortilla strips to top the dishes. I cut them super thin, lightly spray with non-stick spray and bake at 350 until crispy. (Keep an eye on them!) You can dust them with a little taco seasoning for a little added flavor and color. They add crunch and just make the plating beautiful! Thanks for the recipes and for giving Gracie cheese!🥰🥰❤️❤️

Oh my goodness girl! The Chicken Enchilada Rice Casserole was a complete Hit my Family loved it, love it, love it, love it!!!👍 I did include the 3 other ingredients you recommended the taco seasoning, can of green chiles, and the hot Cholula, (that was the part I didn't know how much to add) but, if it wasn't to spicy they just added more. Man I bet cornbread would be good with that soupy green chicken chili. Soak up all that goodness in a piece of Mexican cornbread would even be very tasty. Find a recipe for some Mexican cornbread that has lots of cheese and creamy corn. Man I’m hungry! I found a tater tot casserole that said to cook your tater tots first to make them more crispy and I did that. It made the recipe so much better! Just thought I would share that

I made the cheesy chicken enchiladas for supper last night we really liked them. .. The cheese sauce is really good 😋 The only thing I did different was . I sauteed onions and chopped tomatoes to put in my tortillas with the chicken and the mozzarella

My corgi comes running from anywhere (including a dead sleep) when she hears the bag of shredded cheese! I always sprinkle a little on the floor for her to hunt up 😊 also a dollop of sour cream on the tater top casserole will cut the spicy down

I’m using up frozen left over turkey this time. My family loved the white chicken chill. My 8 year old grand son put it in his favorites list. I I made the one with the cream cheese. I make my chicken enchiladas pretty much like you did. The only change is I use corn tortillas and I give them a quick fry. My husband will not eat flour tortillas. So I know that recipe is good.
