When I make any type of Mexican dishes or casseroles, I make oven baked tortilla strips to top the dishes. I cut them super thin, lightly spray with non-stick spray and bake at 350 until crispy. (Keep an eye on them!) You can dust them with a little taco seasoning for a little added flavor and color. They add crunch and just make the plating beautiful! Thanks for the recipes and for giving Gracie cheese!🥰🥰❤️❤️

Oh my goodness girl! The Chicken Enchilada Rice Casserole was a complete Hit my Family loved it, love it, love it, love it!!!👍 I did include the 3 other ingredients you recommended the taco seasoning, can of green chiles, and the hot Cholula, (that was the part I didn't know how much to add) but, if it wasn't to spicy they just added more. I made the cheesy chicken enchiladas for supper last night we really liked them. .. The cheese sauce is really good 😋 The only thing I did different was . I sauteed onions and chopped tomatoes to put in my tortillas with the chicken and the mozzarella

I make my chicken enchiladas pretty much like you did. The only change is I use corn tortillas and I give them a quick fry. My husband will not eat flour tortillas. So I know that recipe is good.
