Majkl shows us in this video how to make a pissaladiere. A pissaladiere comes from the region of Nice in the Provence area, and it is based on a paste called pissala. In the old days, they used to make a paste from anchovies, called pissala, and over time, the locals evolved the recipe to be a milder, and they used caramelized onions. That give the pizza a great sweet taste. The pissaladiere can be thought of as a pizza, or I consider it more like a focaccia. Either way, it is a great speciality from Southern France.
Ingredients for a baking pan (45x35 cm):
800 g Majkl pizza dough (check my video on how to make the BEST PIZZA DOUGH EVER)
150g of anchovies (salted in oil)
6 large onions
2 tablespoons of sugar
1/2 teaspoon of salt
4 cloves of garlic
1 tablespoon "Herbes de Provence"
20 pcs of small black olives (use olives that are marinated, rather than pickeled in brine)
10 tablespoons of extra virgin olive oil.
