Majkl shows us in this video a step by step instructions how to make an authentic Sicilian pizza called sfincione (in Sicilian, it is called sfinciuni).
The recipe consists of two parts: dough and topping.
Ingredients for the dough (makes 2 rectangular baking pans):
700 to 800 grams of flour (fine)
300 g of warm water
4 tablespoons of extra virgin olive oil
20 g of fresh yeast
2 tablespoons of sugar
10 g of salt
4 tablespoons of white yogurt (Majkl highly recommends this ingredient for a much better taste)
Ingredients for the topping:
500 g tomato purée
400 g peeled canned tomatoes
2 large onions
1 teaspoon of salt (or to taste)
1 teaspoon of pepper (or to taste)
1 tablespoon of dried oregano (or savory - satureja)
5 tablespoons of roasted bread crumbs
5 tablespoons of extra virgin olive oil
200 ml of water
8 tablespoons of grated hard cheeses (available in supermarkets). In Sicily they use Caciocavallo cheese, which is not readily available outside Italy)
4 canned anchovies (for those who dont like anchovies)
20 anchovies for the original Sicilian recipe
