Majkl shows us in this video how to make a pasta speciality that originates from Sicily: Pasta alla Norma. This dish was named after Norma, the famous opera by Vincenzo Bellini, because this dish is also amazing. The special ingredient in this dish is eggplant, and WOW it tastes so good in it. What is also nice about this recipe, is that you can find all the ingredients all year long. They are readily available.
Recipe for 4 servings:
6 tablespoons of extra virgin olive oil
2 cloves of garlic
400g of cannot tomatoes
400g of passata di pomodoro (tomato purée)
3 eggplants
20 fresh basil leaves
400g casarecce (Italian pasta originating from Sicily)
grated ricotta salata (salty Italian white cheese)
