BEST PRIME RIB RECIPE IN THE WORLD!
Today I will share the easiest and the best prime rib recipe in the world ever.
We’ve done this recipe for 15 years
Starting with the cut - you have 3 choices: prime, choice and select. We’ve done all 3 and choice is just wonderful. Prime is too expensive and the difference is minimal.
Now, how much to buy? We usually buy 1 pound per person, or 1 bone for every 2 guests.
We buy the prime rib a couple of days prior to cooking but if you are short on time; that’s OK.
The day of the big feast, we take the prime rib out of the refrigerator at least 3 hours prior to cooking and try to get it as close as possible to room temperature - around 60 degrees F. If your cut is more than 10 pounds, it will take a bit longer than that; I would say, add 30 minutes for each additional pound.
The seasoning - last year, for the first time, we used bunch of herbs and butter following someone else's recipe - that was a mistake - the butter made it too heavy and because of the high temperature, the herbs sort of burned and changed the flavor of the prime rib.
As you can see, the prime rib already have plenty of fat and the butter would be unnecessary.
Start by preheating the oven to 500 degrees F.
And for those of you who know me and my cooking well - you know that I am a firm believer in “the simpler, the better”
To season the prime rib, all I’m using is kosher salt and black pepper. Add a very generous amount of kosher salt on all sides of the prime rib. And don’t be afraid to use too much - kosher salt is not as salty as sea salt. When you are done with the kosher salt, add black pepper to taste. I’m modest when it comes to it, so I don’t add too much.
When you are done seasoning, place the prime rib with the fat side up in a deep backing dish because we don’t want to loose all the wonderful juices.
To calculate how long to cook the prime rib - take the weight and multiply it by 5 minutes. Then add extra 2 minutes to compensate for the heat you will loose when you open the oven. In my case, the prime rib is 10.6 pounds, times 5 minutes per pound, equals 53 minutes, plus the extra 2 minute - my total baking time is 55 minutes.
And I’m using a meat thermometer as well so you can see how accurate this method is.
Once the oven is preheated, place the prime rib one level up from the bottom rack of the oven. Set the timer to the time you got on your calculator (in my case 55 minutes), close the oven and… go away… for 55 minutes.
55 minutes have past… Turn the oven off BUT, DO NOT open it, set the timer for 2 hours and go away again… for 2 hours.
And don’t worry about the low meat temperature - it will go up - I promise you.
After 2 hours, the prime rib temperature is at 130 degrees F, which is the perfect medium-rare donnes.
Be prepared to see the juiciest perfectly done medium-rare prime rib roast.
You can start slicing the prime rib right a way; there is no need to rest it as it has been resting in the oven for 2 hours.
For the guests who like the prime rib medium, you can serve the 2 end slices. But look how juicy and pink it is.

Hi Randy! And thank you! Make sure to stick a meat thermometer in it - with smaller cuts you might have to take it out a bit earlier. Just make sure the internal temperature is between 130 and 135 degrees Fahrenheit. Good luck and enjoy!

I've used this method 2 years in a row now. it works perfect and is easy as can be. on thing i did this year vs last year was I cut my roasts in half. last year we did a 12 lb one and i felt that the outer meat was a little on the well side for me. this year we had a 12 lb and 11 lb roast. I cut them both in half and went for 29 minutes (that because of my oven seems to run hotter so I always deduct a minute or two) I put the two smaller roasts on the bottom and the bigger ones on the top. all 4 came out a perfect med rare. they were incredibly juicy and just plain melt in your mouth.

I watched so many “how to” and used this one for Xmas 2019. It was Amazing. No way I would try another. I’m so happy. Problem was i didn’t save it and thought it was lost in my history. I've been doing it this way for years, only my formula is 4 minutes per pound and no additional minutes - I like my roast a bit closer to rare. Nicely done video - good job.

@@AnOldSchoolHome my prime rib is 18.9 lbs, that's like 94 minutes at 500!!!!, I don't think that's a good idea for me. Others suggested that I only go 30 minutes and then shut off the oven but 19lbs is awful big, do you think it will be a good idea? I have always done 4 bone just like you do but this is a massive 7 bone.

The heaviest I’ve done using this method was 10.6 pounds and the middle was more on the rare side, so I would say yes just to be safe. I hope this helps. Happy Holidays!

THIS channel is thee ONLY way to cook a perfect prime rib roast....PERIOD! This same method has been done exactly just like this for the last few generations in my family. The only thing i have negative to say about making prime rib this way, there is NEVER any leftovers. 😭

Did this method for years until I got a new convection with a fan. It didn't hold the heat in to do this method. Now I do the 250 degrees until roast reaches 125 degrees. Remove from oven and let it rest covered with foil. Just before serving broil for 5 to 10 minutes to get a crust.

Thank you for the video! I tried this recipe and oh boy, it turned out wonderful! I did a 12 lb. my mistake was I used the McCormick steak seasoning and it burn. That was my fault lol. Besides that it was wonderful 😊

I looked up so many recipes and decided on this one. Boy am I glad I did! I will never cook it any other way!! I had a small 4.33 lb prime rib roast. After my 24 minutes I turned off the stove and walked away. With 1hour 23 minutes left my thermometer reached 130* ! I was puzzled because it had so much time left! Didn’t know what to do but my husband convinced my to leave it in and see what happens. I changed the done time on my thermometer to 140* to stop the beeping. It rose as high as 137* then started declining. After the 2 hours the thermometer read 122* so I was a little worried. IT WAS PERFECT! Better than any restaurant I had ever eaten in! Thank you so much for this perfect recipe! ..... Also loved your note lol

Hi Kathy, I also have a 4.5 lb Rib Roast, but not an oven safe thermometer. In your experience and knowing my situation, how long after turning off the heat would you suggest opening the oven to check the roast (and hopefully serve)?? -I am also looking for a med rare cook. Thanks in advance!

Kathy same here. However we could not afford prime so we got a select rated roast. 4 pounds at $5 a pound with two small bones. We basically cooked in a fancy toaster oven and it came out wonderfull.

I tried your method with a 6.8 pound roast and it was easy and came out perfectly. I was impressed with myself. Thank you so much for sharing. I saw a boneless roast at Costco for a great price. How does the cooking temp/time change for a boneless roast?

I agree this method is easiest and best way to prepare a prime rib period! I have also made the mistake of trying herbs and in my opinion beef in general should only be seared with salt and pepper.

Great recipe but you you don’t need to have roast at 60 degrees if taken out of fridge 4-1/2 hours earlier. Temperature was 48 degrees when started to cook roast.

This recipe might not work perfectly for a cut that big (I’ve never cooked one that big). But the time afterwards should be the same. Please look up a cut that big on the internet as I don’t you to be disappointed. I think the heaviest I’ve done is 11 pounds. Normally, you need 1 rib per 2 people, so could probably cut a piece of it for later use.

Also, the cut we bought this year was 20 pounds - we cut a 6 pound chunk and cooked it last week using this method and it was perfect. At the end of the 2 hours the internal temperature was 130 degrees. In the middle it was a bit rare for me, but my husband liked it. The reason it was more on the rate side in the middle is because I only took it out of the refrigerator one hour prior to cooking vs the usual 3-4 hours. Good luck!!

Thank you! I really appreciate it! I am not sure about the boneless as it will take less time to cook. I would recommend using a meat thermometer right in the middle if you will do this method and pull the prime rib out when the internal temperature reaches 130 degrees Fahrenheit. This method will yield a cold roast that requires a very hot plate and boiling anju! The better choice is use the 5 min per pound rule at 500F but then turn the oven down to 300F for another hour or until the temp for the roast is at 140F

I have seen similar recipes and they say you must bring the roast to room temp. before going in the oven at 500. This video does not say to do so or is it assumed??

Hello! You are correct. At about 37 seconds mark in the video I mention that we take the prime rib out of the refrigerator at least 3 hours prior to cooking. I usually calculate the time at 30 minutes per pound. So if you have a 10 pound cut, take it out 300 minutes, or 5 hours prior to cooking. I hope this helps. Thank you for watching!

Thank you for posting this very detailed, but simple Prime Recipe. I researched so many recipes on KZbin, and I decide on your recipe because of the simplicity and how fabulous your Prime Rib looked after it was fully cooked. I'm not sure what I did wrong, but mine came out rare except the ends were medium rare. Luckily, my guest prefered his Prime Rib rare! BTW my Prime Rib weighed 5.79 and I cooked it for 31 mins and left it in the oven for 2 hours. The meat thermometer did go as high as 130, so not sure why mine didn't look as cooked as yours did in the video?!?!?

i tried this method with just 1 Prime Rib in the oven and it came out perfect. The next time I put 2 Prime Ribs in the oven each where 9lbs for a Total of 18LBS, I did the 5min per pound for a Total of 90 Min at 500 Degrees and 2hrs of letting it sit in the oven and it came out over cooked. I did this Twice thinking I just did the math wrong the first time and sure enough it came out over cooked again NO pink at all. I tried again with just 1 Prime rib and BANG it came out perfect. My Question is , Shouldn't the math be the same for the Total lbs regardless of 1 Piece or 2 Separate pieces? Or do I just do the math of the larger of the 2 prime ribs? Thank you for your help.

@@AnOldSchoolHome I am going to try it, I will have my thermometer in the smallest one, (1 is 12.1 LBS, the other is 11.7 LBS) and when it gets to medium rare I will pull open the oven and pull em out. I am going to cook at 500 for 12.1 x 5 minutes (61 minutes) then sit for 2 hours. the worst I am thinking is they might be more on the rare side. I will let you know how it turns out.

Oh, and one last thing - season the prime rib with the kosher salt just before you have to put it in the oven, so the salt crests a crust. If you salt the prime rib too early, the salt will melt.

Hi Gail! We had a 20 pound one yesterday because I wanted to see if it works the same way. However, I had to cut a chunk of it because my pan is not big enough. So I cut it down to 17 pounds. So! I had a meat thermometer in it and had to let it sit in the oven for 2 hours and 20 minutes (vs 2 hours) after turning it off in order to get it up to 130 degrees internal temperature. I had a 12 and an 11 lb roast this year. I cut them both in half because i find that the outer meat gets a little too well done for my liking. this gave me 2 - 6 lb roast and 2 -5.5 roasts. we split the dif in time and went a total of 29 minutes. came out perfect.

We usually do side dishes that don’t require oven - sautéed asparagus, sautéed brussel sprouts, mushed potatoes, or potatoes in the microwave... you can sauté the carrots as well. I hope this helps.

My oven only get to 480 degrees,Christmas in 5 days,Help...what do I do

Hello there! I am not sure what the cooking time would be at 480 degrees. You should look using a different method maybe. There is got to be another way to make a prime rib. I’m sorry I couldn’t help...

I want to say yes, but I’ve never done it with a small cut. The best thing you can do is to use a meat thermometer and monitor the internal temperature and make sure it doesn’t go above 130 degrees Fahrenheit.

Please help---I am going to cook two separate bone in roasts. Two of them because that is all that was available to purchase. Although I will put both of these in the same pan, should I be afraid to cook them at 500 degrees for the amount of time I calculated for the larger one? Or, would you cook at 500 degrees until the internal temp reaches 70 degrees, then turn the oven off and wait until the internal temp shows 130 degrees? Or, would you link or connect both roasts together tied as one big one with string and cook as you show in your video for the 10.6 # roast?

So sorry to have omitted the most important item in my question above; one roast is 6.86# and the other is 4.64#

Ive cooked this method for many years love it , perfect every time , however cooking on foil is big No No, very unhealthy to your system

Yes, it is less salty than the regular table or sea salt.

Do I really have to go away for the first 55 minutes of baking time? What will happen to the meat if I stay and watch it cook? Will that ruin my Prime Rib?

Most Oven reach TEMP.of 230C you saying 500 degrees Fahrenheit equals 260 degrees Celsius(Commercial Oven YES)not Household?

vilko skorlich this is the oven in my home (not industrial) and heats up to 550 degrees Fahrenheit... I just checked with my father in law (he is in a townhouse) and his oven goes up to 550 degrees Fahrenheit as well..

This cooking method did not work for me. My oven must not hold heat as well. Roast was nowhere near 125-130 degrees after the two hours.

I’m sorry about that Matt! I’ve seen comments from last year that if the oven has a cooling fan, this method will not work.
