Ingredients:
1. 300 g Sweet potato noodles
2. Vegetables: asparagus (200g), paprika (2), onion (1), carrot (100g or 1/2 of medium-sized), mushrooms (5), and green peppers (3)
3. Sauce : soy sauce (60 ml), cooking wine (50 ml), sugar (1 tbsp), and sesame oil (60 ml) :to be mixed
Steps
1. Sweet potato noodles: Soak in warm water for 20 min
2. Chop vegetables (3 mm-5 mm), not to thin for chewy texture while awaiting step 1
3. Make sauce
4. Stir-fry vegetables from hard to soft ingredients: 30-40 seconds each over high heat. Use 2 cloves of garlic to be minced for asparagus pan-fry. Avocado oil or vegetable oil to be used
5. Cover with a lid for stir-fried vegetables, cook for 2 min over medium heat. Turn heat off.
6. While waiting for step 5, rinse soaked sweet potato noodles, and pour boiled hot water in noodles. Add 1 tsp salt. Swirl and let it sit for 2 min as well, and then drain
7. Turn back pan on (high medium heat), make a room for noodles. Add noodles and sauce, cook for 1 min while mixing it first, then mix all ingredients.
8. Black pepper (1 tsp) and sesame seeds (1 tbsp) optional prior to serving
