I love vegetarian noodle dishes though I grew up in Hawaii sampling all kinds of noodle dishes like this one - with or without meat. Now that I'm eating a lot more vegan dishes, I LOVE making pancit or japchae...especially when they use the GLASS NOODLES...so addictive and delish and the more the veggies the better! A couple weeks ago I tried the Trader Joe's Japchae, it's been out of stock since then. It was so delicious I had to find a recipe to make my own. This recipe is easy, and so flavorful. Here I was cooking JapChae by boiling the noodles till they’re cooked by aldente, then seasoning them in the bowl and then adding the sautéed veges to the noodles. I’m gonna do your method and recipe! Love the vegan part of it too! Keep it up with more easy 1-dish meal, please!

Definitely worthwhile reconnecting. All the traditional Korean cuisine is very healthy, and all the excess bread/meat/dairy use of Western cuisine is what undoes the health benefits of Korean foods. I discovered this after changing my own diet to Korean cooking. As meat is very expensive, I go without it except for Sabbath.

I am so glad I came across this great gal sharing her expertise, I will make some noodles half done and then let them finish cooking in the delicious base.
