That's true, while they are similar and can be used interchangeably, Red Beans are smaller and brighter with a sort of oblong shape. Hope you have a Merry Christmas.

On my very first day of college in NOLA, I went thru the chow line and they were serving RB&R as one of the entrees. It was a red (I mean RED) goop over rice. I passed, and went the next 3 years believing that RB&R was this nasty red stuff. A friend of mine's girlfriend , a local, had some of us over one night and made RB&R; I told her about my experience and she made me promise that I would taste hers. OMG!!! It was so good. From that day forward I have been a fan and ha e made a few times for myself. My wife, who I met in college in NOLA, doesn't like it because it has beans. (How I remain married is a mystery)

I followed the recommendation on the bag of beans then added one extra cup. I like my beans to have a sauce rather then dry. I use water. If I had chicken as my protein then I would have made chicken stock and used it. Thanks and Happy New Year.

Not to confuse people but a mirepoix is onion, celery and carrot. What you're referring to in Cajun cooking with the onion, celery and bell pepper is referred to as the holy trinity. Don't want people hearing mirepoix and then they go and add carrots to their red beans and rice instead of bell pepper.

You're almost correct "Holy" trinity has "garlic" in it with the onion, celery and bell pepper otherwise it's just Trinity.

Onions, green bell pepper, and celery are Creole. The Cajuns found this combination used in cooking when they arrived in Louisiana from Nova Scotia. African slaves introduced Gumbo and Jambalaya to Louisiana colonists. Red Beans were introduced by Haitian refuges after the revolution. Every meaningful dish in Louisiana has African roots.

Gotta use animal fat to get those sausage at the beginning or at least a high smoke point oil. that sausage has paprika and sometimes smoked paprika, it gets colour on it quick, less colour is better coz that sausage is burnt, the spices in it burn quick. Otherwise this is a boss dish, good slow patient cooking... Making something out of simple things, into a special dish, an event of a dish even.. Could sit centre table with sides 😎🙌

Turn the heat down. Cast iron enamel pans conduct the heat too well and you don’t meet to have the flame so high! Please turn it own a little.

It's kinda runny, but I know it's good. It's soupy tho. I'm from Louisiana. My ant-tee from bougalousa, living in Gramercy made hers creamy. My mama made hers soupy like this one And my daddy who is from North Louisiana put ground beef in his, which was sacreligous! But my mama red beans were the beat of all the NEXT DAY. Her gumbo was like that too. It tasted better the next day

Gumbo is made using a roux. Red Beans and Rice is not. Both dishes are made with similar ingredients less the beans but the techniques are different. Happy New Year.

Don’t forget to add a teaspoon of baking soda to your finished beans, saving yourself and family from embarrassing gas. Be sure to rinse your rice well before cooking it avoid additional stomach pains.

Merry Cajun Christmas. Thank you. I didn't use 2 pounds of beans there's only 2 of us. I had some leftover ham I wanted to use, and I always have all the other ingredients on hand. It's a small electric bean pot. I put them up at night with water, brown sugar, salt, pepper, garlic, onion, bay leaf for a 6-8 hours until they are completely cooked and before they fall apart. The temp is very low. Just makes it easier and less time for me the next day when I assemble the recipe to have the beans already cooked. It's really delicious.

Just an observation your heat is too high the sausage is burnt not browned. Mirepoix is French and has "carrots" along with the onion and celery. You have a "Trinty" which is Cajun instead of carrot its bell pepper. Looks good though!

Why are mentioning creole when making red beans and rice. I guess if you put tomatoes in the red beans, you can call it creole. I've never used tomatoes when I make red beans and rice. I use the holt trinity, garlic and time. I may add cayane I will use both smoked sausage and andouille and throw in ham as well.

Red BEANS AND RICE is not a one-pot dish and the protein is usually placed on the side. However, if you have link sausage in the Red Beans and Rice it can be a one-pot dish. It could go both ways if you add tomato paste to the red beans. Thanks for the comment, Have a great day.
