I have this video in my downloads on KZbin. It’s the only red beans recipe I will use after trying so many. I’m in Oregon and my only actual exposure to authentic red beans and rice is a small local restaurant owned by a man from Louisiana and this is the ONLY recipe I’ve found that gets the same thick gravy as his. Well first thing he didn't put the holy trinity. Onion, bell pepper, celery and the fresh garlic is the pope. And we use chicken broth not water. And I've never met someone that took the grease out.... fat is flavor. But to each is own. Check the cajun ninja, his is a little more accurate

This guys cooking is anything BUT! Cajun. I’m Cajun, and Iain’t never seen nothing like what he’s doing. He’s no more Cajun than that crap he put in there is andouille sausage. People confusing andouille seasoning instead of andouille making methods, has now opened the flood gates to all the commercialized hot dog meat being called andouille. There’s no such thing as andouille seasoning. The big commercial meat packers couldn’t compare to Richard’s Cajun sausage, so they laid in wait until people drew their own conclusions and assumed andouille was created by seasonings rather than production and smoking methods. The oldest and most world renown andouille comes from Laplace Louisiana, and is seasoned very lightly with salt, pepper, and red pepper, that’s it! Clowns!

@@tobyihli9470not everyone can get to Jacob’s though or Baileys. Jacob’s is good though. But I personally prefer my own home made an home smoked in a wooden home built smokehouse. You’re right though. Andouille is t a seasoning. It’s more the texture of the product even more so than the smoke. You can smoke it very similar to sausage. You can even season it very similar. It’s the grind of the meat in the casing is different. It’s a large or larger grinds of the meats. An that’s the big difference. A your right. Been saying that a long ass time the commercial done stuff just isn’t it. I grew up in Laplace though. But even with Veron sasuage from the stores isn’t any good. But if you actually get it from the local location that’s still smoking it themselves etc. It’s good. But the whole commercial process a the big stainless commercial smokers a shit. Ruin any good smoked sausage or andouille. Compared to an actual true smokehouse. An if it’s actually properly made. I don’t really care for any of them that come out of the stores. It it can’t be had from a place atleast like Jacob’s. Or home done. It isn’t it.

Great idea on the sausage presentation and draining the grease . I Do a very similar recipe but I add ham hock, celery, and fresh thyme, and cayenne pepper !!!!!

The “holy trinity” of Cajun cooking includes celery and all the other recipes I’ve seen for Red Beans and Rice have included a couple stalks of celery.

This is a good recipe. Use broth instead of water,and towards the end remove some beans and mash them for a creamy texture. Perfect after that. Good job guys.

I make this dish and get a good gravy but not when I use tap water. Make sure you are using spring water.

@@c_farther5208 thanks for that tip. I actually made them last night but the gravy still fell a bit short (it's more of a brothy gravy). I've never figured that my water matter a "hill of beans" lol, but maybe that's been my problem too. I saw that Brett used Ozarka, but I really didn't think that mattered. I'll be trying spring water next time for sure

You need to take a cup of beans out and mash them with a potato masher and then add them back to the pot, this makes sort of a thick gravy

You wash beans in a pot so the bad beans will float to the top. Fresh parsley and garlic would take it to another level and some butter.

Awww Cuz, you've gone and taught me something else. 1st you taught me the difference between a male and female bell pepper. And now you show me that you can cook red beans and rice without soaking the beans all night. That is awesome, I had no idea you could just pour dried beans straight in the sausage/veggie pot and cook them until soft. I've even cheated and used canned red beans when I didn't plan ahead and remember to soak my dried beans ahead of time. I believed that without prior soaking, that you would have to cook them for like 8 - 10 hours. This changes everything, lol. I've always preferred the dried small red beans, but they required me to plan ahead (because of the soaking step), and I'm not always good at planning ahead. I can't believe that I've made red beans for years thinking the beans needed an all night soak. Thanks!

Regarding green peppers.. I learned from al old chef... 40 yrs ago... 4 prongs are sweeter and tastier... 3 prongs were thicker and better to cook with... I think their all good!! This red beans and rice looks amazing... I would have added celery and chili pepper!!! The beauty of so many great cooks is sharing... thanks guys!!
