Best Sourdough Pancakes (Double Recipe)
Wet Ingredients:
2 C sourdough discard
4 eggs
2 C milk, plus more as needed
6 TB melted butter or oil
Dry Ingredients:
3 C flour
4 TB sugar
1 tsp sea salt
4 tsp baking powder
2 tsp baking soda
*This recipe can be made the night before or just before cooking. If you make it the night before, wait to add the baking soda and baking powder until you are ready to cook the pancakes. This will make them fluffier.
Instructions:
1. Whisk together the starter and eggs
2. Whisk in the milk and butter/oil
3. Mix dry ingredients (except baking powder and baking soda) in a separate bowl with a spoon
4. Using a stand mixer or a whisk, add the dry ingredients to the wet ingredients and combine well. Chill overnight
5. The next day, add the baking powder and baking soda and extra milk as needed. The texture should be smooth, bubbly, and pourable. Let the batter sit for at least 5 minutes to aerate - it should be nice and bubbly before using.
