Carrie Mtn Carries, use an UNGREASED skillet.....and the heat depends on your stove/pan. Start with just under medium heat, about the 7 o'clock hour on the face of a clock. Adjust as necessary such that the tortilla browns within 45 seconds.

Jasmine, this recipe is super delish. I just made some a week ago and it was excellent with homemade, chunky salsa verde, cooked chorizo (fat drained) and black beans. It's great warmed up just as it is.....most especially hot off the cast iron pan. Okay, my rolling is not perfect, but whatever roundish shape it comes out as, it's still yummy and it works. I loved your video. My grandmas are from North Mexico and they cook the original flour tortillas (don't bother even reading Mexican comments about you're doing wrong. I guess they're from South Mexico and they don't know how to make flour tortillas they taste like the States.) Well one of my grandmas use Lard to make them (thats the original flour tortilla recipe) and the other grandma use vegetable shortening or butter, so you're doing great mixing all the fats like lard of bacon, butter and crisco it's ok if you use baking powder if you don't use it nothing happens! They taste great with or without. Don't worry if its a square it takes practice to make circles. When my grandma makes the first tortilla she puts butter in it and makes a taco to taste it, yum!. You can grill steaks seasoned with garlic powder and salt cut them in fajitas, cook canned smashed beans with a little of oil and a pinch of chicken bouillon cube, smash avocado pinch of salt and some drops of lemon (that's right! Guacamole!) and if you like vegetables finely cut some onion, tomato, cilantro, drops of lemon and pinch of salt (thats fresh salsa if you add a little bit of green chile very finely cut) Put in the flour tortilla the beans, the grilled steaks finely cut after grilled, avocado mixture (guacamole) and salsa in the flour tortilla to make a great burrito. I hope you like it! I love to share recipes so I'm starting a cooking channel m.kzbin.info

Sthefanie Valenzuela, thank you for your kind words and for sharing your history! I'm from the northern end of Guam, a very TINY (32 miles long) island. Folks from the southern end of Guam cook some foods a little differently, but whatever the dish, they all pretty much taste the same. Thus, I ignore the negative comments because I realized that some folks just don't know, even from within the same country. I definitely think you should start your own channel and showcase the foods of your culture. Guam actually has ties to Mexico from way back when during the Spanish Galleon trade era. Our Chamorro foods are indicative of the Mexican/Spanish influence. Thanks again for your very kind words!!

I have witnessed two techniques to getting round tortillas. My best friend Paula from Mexico, believes the water must be boiling hot and prepared by hand as hot as possible. There is pain involved. Then after her main dough ball is formed she starts grabbing and rolling some of the dough in balls. After they rest for a bit she pushes an indentation into the balls and when she is ready to roll them, she smacks them down where the air bubble from the indentation makes a good pop. It is a sight to behold, but second nature for her. One technique another lady told me, was instead of pulling from the dough ball the secret was to squeeze the dough where it pushes through your hand like toothpaste and pinch it off. I do not know why, but my tortillas are rounder using this advice. I have not made tortillas very often, but I'm a white girl living in Texas, and I love Mexican food, and learning how to make it. One day I will learn how to make tamales, it is a top secret recipe around here. I am laughed at and told it is much too hard. And one day I must put a video up of Paula making tortillas.

This is not far off from how my dad taught me, but we use all bacon fat or lard, whichever is handy, though bacon fat makes the BEST. Also he taught me by just scooping the flour with his hand and by pouring the salt and baking powder into his hand and just showing me "like that". Anyways good stuff, especially emphasizing letting it rest, and this pretty much IS mexican tortillas as I grew up eating.

I have a lodge cast iron 14 inch pizza pan. Best thing ever for big tortilla. Makes a great pizza stone, too for baking pizza, bread and stromboli. I love it on top of the stove for flat breads. It's my go to pan when you need a good hot surface. Well worth the 60 dollar investment if your a dough maker. :o)

your tortillas look delish! my mother made a thicker more bread like tortilla. i make them now using a very similar recipe except except for one cup of whole wheat flour for increased nutrition. also, the added fiber decrease bloating while staying soft and tender. for rounder tortillas, starting with the rolling pin in the middle of the tortilla and roll up. then back to the middle and come down. then rotate the tortilla 180 degrees and repeat. your videos are great.

This recipe (3 cups of flour) makes 12, 8-"inchish" tortillas. I've doubled the recipe before without any problems....just takes longer to finish, but then you have leftovers for later in the week :-) See the link to written recipe under the "About" tab above.

Has nothing to do with the type of rolling pin. It's the method in which they are turned. If after the first roll, they are turned o my 45 degrees or so, roll again, another 45 degree turn they will be round.
