remember that you should write the phrase that you hear. The speaker says "note-taking" so that is what you should write.

Yes. If you do that, it is clear for the examiner to read and you don’t have to decide if the answer should start with a capital letter.

In a real exam which hordes of candidates sit for, difficulty level gets tougher and so candidates tend to fail more. I can assure you a real exam doesn't look a walk in the park like that sample test at all.
