What a great idea! I've made all sorts of different safe-to-eat raw cookie doughs, but I've never tried one with cottage cheese. I need to try this. Thanks for sharing.

That is a great question! I've found that the apple cider vinegar helps intensify the chocolate flavor without adding more sweetener. You can easily omit it if you like :)

That's an excellent question. I grind my oat flour from old-fashioned oats. I asked Gemini and here is the response it gave... Oat Flour: Generally, it's not recommended to eat commercially bought oat flour raw. While oats themselves are safe to eat raw, processing can introduce bacteria that can make you sick. However, if you make your own oat flour by grinding rolled oats in a blender, it should be safe to eat raw because the rolling process typically involves steaming which kills pathogens. Almond Flour: Most commercially available almond flour is safe to eat raw because the almonds are usually pasteurized with heat before grinding, eliminating harmful bacteria. Here are some safety points to consider: Always check the packaging: Look for any warnings or recommendations about consuming the flour raw, especially with oat flour. Source of the flour: If unsure about the processing methods, it's best to err on the side of caution and cook it before eating. Potential health risks: Consuming raw flour can lead to foodborne illnesses like E. coli or salmonella, causing stomach cramps, vomiting, and diarrhea. Overall: Commercially produced oat flour - Not recommended raw. Homemade oat flour from rolled oats - Likely safe raw. Almond flour - Generally safe raw, but check packaging. If you're unsure or have concerns, it's always best to cook both oat flour and almond flour before eating them.

Hi Leah, you're right, it does have a cheese flavor which isn't awesome if that's not your jam :) You could replace the cottage cheese with Greek yogurt. It would taste tangier and less cheesy.
