Trigger is the way to go, pan-fried with a 50/50 mix of Italian bread crumbs and parmesean cheese. Brown one side, flip, then in the oven at 350ish till done. Top it with some crab and a parm cream sauce. That's the recipe that won my wife over 🤣

I also used to believe cheese does not go with fish. I don’t like cheese one my fish tacos at all but I did invent a broiled fish with fresh grated Parmesan that’s incredible. I now concede that cheese can un occasion go with fish but still not on a taco. 😂

I am stunned! Back in the days when we were island hopping in the Philippines we were catching and collecting our food. A native guy grilled a trigger fish: It was fresh but tasted awful and was dry as hell. Since then I thought that would be one of the fish out of the corral sea I would never eat. So for over fourty years I regarded the triggerfish as sheer survival food and never ate one again! Even on local fish markets they are not sold often. Another thing is that there is nearly only head with little meat on it. I hate the way they attack you and try to bite you when you snorchel through their territories. They are really agressive. A guy who took care of an aquarium in a zoo told me that the trigger fish get so agressive that they attack everything. So when they get big they often get killed for saving the other fish in the aquarium.

That and also the fact that the bait fish and crustaceans that trigger fish munch on will be much more active at coral sea beds during night time so targeting the bigger predators at night time like cubera or bigger mangroves is much more efficient and fruitful 👍🏻

As a mate for Fishing Headquarters in Ft Lauderdale growing up we had a fleet including 4 sport fishers and when I’d work the head boat in the fleet we would obviously save all the Bonita, tourists would swear we were keeping the “tuna” and telling them it was for strips. Lol. Definitely told customers fish were poisonous to prevent the drunk red neck type tourists from taking snappers off the line. Mangos bite em and it’s funny but a liability lol.

So you have to switch to corn tortillas if you want any semblance of healthy tacos. They also taste way better but you have to cook them like you did the flour ones, otherwise they will crumble. Call me a monster but as cheese goes I think those tacos would love some queso fresco. A little pico de gallo would also be amazing on those. Basically make them a little more Mexican. So glad to see the targeting of triggers. They are a nuisance until you taste one.
