The green sauce, we called it "seafood sauce" or "nam jim seafood." It's made of Thai bird chilies, fish sauce, sugar (some ppl put palm sugar), lime and garlic. It's the mother of sauce. You put that on everything...well mostly seafood. LOL

I get to go back to Thailand this week and I'm definitely going back to that market again. I went to it for the first time the last time I went there and it was amazing XD. Hey if you're still there you should check out a mall called Mega Bangna and go to a restaurant called Pepper Lunch and another one called Fuji (Japanese restaurant). It's pretty great. Don't get confused lol I'm a Thai girl living in the US. I go back to Thailand every summer.

Hi Mickey! Just a quick correction, the white fatty gelatinous substance in inner core of the vertebral disc is not the bone marrow! (15:36) It is called Nucleus pulposus. It is a jelly-like material that consists of mainly water, as well as a loose network of collagen fibres. Forgive me for pointing this out, I just finished my anatomy exam, still traumatised from remembering all the anatomical terms.

Hi, I'm a Thai fan! The first noodles dish he had (one with pig ears) is called "Yum Khanom Jeen + Hoo Moo" (rice noodles salad w/ pig ears). Notice that the vendor added thick brown sauce to the bowl. That is Pla Ra (fermented fish sauce) it's what makes the dish so flavorful :)

Too many people are too uppity about "ethnic" food they aren't used to. That's why most Thai restaurants can be found in larger cities. Just consider how many people make stupid jokes about keeping their pets safe because there's a Chinese restaurant in town, and those are pretty much everywhere and very American.

You can get most of these foods in larger cities that have Asian districts but it's going to cost a lot more considering the ingredients have to be shipped half way across the world. Also there is different regulation when it comes to food and safety.

Yeah. I can't find hot Thai or any other type of spicy ethnic food in my area. I am in Arizona and grew up on hot chiles in everything. My guess is that they get tired of customer complaints and having food sent back. Some restaurants try to go bold but eventually dummy it down to appease the masses. Ran into an interesting problem at an authentic Chinese restaurant. Ordered something exotic, (don't remember what), and the server refused my order saying I would not like it. Adamantly refused even when I argued. Never went back. It's OK. I have been cooking for 50 years and just enjoy my meals at home now. Seldom go out.
