This area is Kurdish actually. In turkey, Kurds are known for their kebabs. Before rhe 1960s there were no kebabs in Istanbul. The Kurds brought kebab to Turkey.

So after reviewing this exclusive episode I realized Turkey is a place added to my list I must visit. Each local eatery looks amazingly delicious and holds its own unique qualities of preparation, flavors, & signature recipes. The chosen protein is lamb in this town which is lean, juicy, & tasty especially when prepared with experience. I absolutely crave seasoned tender chickpeas in my salads so the wrap with the fresh veggies, roasted eggplant, & chillies will also be my go to selection. However, the meat soup with rice, lamb fat, neck, & chillies looks mouthwatering worthy for sure omgoodness!! Every single kabob reviewed in this tour looks so satisfying & authentic!! I also noticed how clean each restaurant was & the custom ovens and grilling stations are state-of-the art designed to accommodate their culinary crafts. The people of Turkey are so friendly & the scenery is so beautiful with a calm appealingly approach. I love the last local cafe displaying that beautiful courtyard surrounded by the vintage architecture decor which goes perfect with the fresh pistachio based Turkish latte/coffee bev. Thanks Mark so much for your stunning documentary of such quality, classical, educational virtual culinary escapades!! I am from Gaziantep, and agree with the opinion. I think Turkish food is still underrated even though it is famous. There are so many different types of Turkish food that even we, as Turks, do not know them all. We learn the other city's foods and their different type of making food process.

Hi Mark. As a Turkish I must say Gaziantep cuisine is really special. I am glad you enjoyed it. The flavor of the lamb and liver, all kind of meat depends on animals and what they eat... this also means it is connected to the climate of the area and the plants. the quality of good plants means a better meat. of course, there are few details too such as to not to refrigerate the liver etc.

The reason why the liver is delicious is mainly cause those are not industrially farmed animals. They are mainly raised on pastures. Obviously, it's a city that consumes alot of lamb, so I would assume they are getting fresh liver everyday.
