FYI the compressed bun kind is not called “banh hoi”, that’s the different type of bun in the South. That’s called “bun la” basically means “rice noodles leaf”

The tour girl does not know and understand much about Hanoi food. Bun cha might not be very popular everywhere in Vietnam, it is a quintessential Hanoi food (perhaps #2 behind pho). It is a defining and well-known local dish regardless of the Obama visit (still thankful for him and Bourdain for making it even more famous). From her accent, she is not from Hanoi. While she seems to be a nice person, a knowledgeable local guide would make this video more informative

Try "Banh da" in Hai Phong next, especially "Banh da cua". It's a special type of noodles that come in all different sizes, texture and flavor that only Hai Phong has. It's basically dried Pho!

Small note: "Fake dog meat" is not totally accurate imo, though it's literally the direct translation of the dish's name :D It's pork feet and you cook them using spices and herbs that usually go with dog meat, like citronella, alpinia, ginger, etc..., hence the name "fake dog meat" since it somehow taste the same.

I think you miss something important Sonny! For anyone who wanna try whatever food in Vietnam which contents the soup (or sauce), it plays a very big role in that dish. I mean, don't just focus on the other parts and forget the soup ( or sauce); pour them! :'( Let's try each piece of food with a spoonful of broth, at least that is how i enjoy those incredible dishes! (from one who really misses his hometown foods and really loves to see you try those! :)
