📚 Shrimp Stuffed Mushrooms
Ingredients
8oz mushrooms
1 tablespoon butter
2 cloves garlic
1/4 small onion, diced
5 large shrimp
1/4 cup mayonnaise
1 tablespoon oyster sauce
1/4 cup Parmesan cheese
4 Diamond Head Bakery Soda crackers
1 teaspoon Paprika
Instructions
1. Preheat the oven to 425F.
2. Clean and remove stems from the mushrooms. Dice the stems.
3. Set a pan over medium high heat. Add diced mushroom stems, butter, onions, and garlic. Cook until moisture has absorbed and the onions are translucent. Remove from the heat and set aside.
4. Peel, devein, and dice up the shrimp. Set aside.
5. Add Diamond Head Bakery Soda Crackers to a food processor and blend. You can also crumble by hand.
6. To a bowl add mayonnaise, oyster sauce, Parmesan cheese, 2/3 of the soda crackers, mushroom mixture, and shrimp. Mix until well combined.
7. Add a heaping scoop of the shrimp mixture to the mushroom caps. Top with paprika and remaining soda crackers.
8. Place mushrooms on a baking sheet and bake for 15 minutes or until golden brown.
9. Allow to cool slightly and ENJOY!!
