We finally have a kitchen of our own and we roasted chicken for the first time and... well let's just say it didn't work out as well as I expected. My favorite Sunday night dinner...I add canned mushrooms to the pan sauce, and a touch of almond creme or half and half...YUM! I also add sage on top of the bird...and sometimes vary the spices I use. All so GOOD!

I've been making roasted chickens forever but usually cook at 400, always turn out very good. However, I thought I'd give your recipe a try... it was delicious. My husband said "this may be the best chicken I've ever eaten". I'm not sure if it's the cast iron skillet, the lower temperature, or the delicious butter mixture under the skin (or all 3), but I will always prepare this way!! thank you for the recipe.

I tried this and it was awesome. I brined the chicken overnight first. It was so juicy. And I added kale pieces to the veggies at the last minutes after roasting them. It was so good I made it the following week. Thanks Beth :)

Excellent video. Very clear and easy to follow. Just made it tonight and it was delcuous! I added just a tad of Chardonnay and lemon juice to the rosemary garlic butter spread for coating the chicken. The Dijon mustard gravy added a very nice touch. Absolutely delicious, Thank you!!

Whoa! Those incisions in the roasted chicken are revolutionary in my kitchen, and perhaps others' kitchens as well! I have always roasted my chicken without any ties because I just didn't want to work more to tie my chicken up in a confusing way, so why bother. Thank you for sharing Beth! I made this today for company and it was the best chicken I’ve ever tasted! I got so many compliments. I used the wrong kind of potatoes and they turned out very tough but the chicken was so good that I was heartily forgiven 😂

Just made this chicken and I can tell you it was amazing!! My dogs and cat went crazy and my husband and I had to fight them off! (I actually shared some with them although I did it begrudgingly) It was like a fine wine but it was a fine chicken! I couldn’t get a kosher one but an organic one from Costco was excellent. I had the cast iron pan although it was a bigger one. My chicken was big thank goodness. I can’t say enough about this chicken....yum.....

I didn’t have a kosher chicken so I brined mine about 4 hours. I can’t imagine it being any better. Also added a couple carrots. That way it was a complete meal!

I have very similar way of cooking this recipe,the only thing that is different is...i put crashed lemongrass and garlic inside with the lemon where i squuezed the juice from to give that lovely flavor and i scrub my ingredients instead of just drip it on the chicken..And the way she washed her iron cast ,i do the wat too.😉👍 love this recipe!
