Nice recipe Sam! The Family LOVED IT! I added a slight twist by cutting a garlic clove in half and adding them to either side of the chickn face down. After chicken cooked I squeezed the roasted garlic paste into the pan added some flour and a cup of chicken broth to create a nice sauce for the chicken. Thanks for continuing to deliver great recipes combined with humor. Cheers!

After you salt the bird, let it sit in the fridge for 24 hours to dry out the skin. Best crispy skin after roasting. Dry brining is awesome!!

I took a deceased microwave & tore it down for the parts (the massive magnets in the magnetron unit & the *heavy* copper in the power transformer), and while in there removed the little pancake motor from the turntable-- made my own turning display (they usually turn at @ 6 rpm....)!!

A tip for this recipe, if you can't find soy paste it's easy to make! I used a half cup soy sauce, and a teaspoon of cornstarch and water. Mix cornstarch and water and add it to the soy sauce then render it down to thickness. Worked like a charm!

So, I tried this myself, and the chicken was good ( I generally like lemon garlic chicken). I did the potatoes the same way with some instant garlic mashed mix and the corn flakes crumbs, and they really were busting! Great flavor! And that's what it's all about.... the flavor!

5 stars, amazing chicken! We made it with shiitake mushrooms and asparagus with olive oil salt/pepper parsley instead of the deep-fried mashed potatoes but it was phenomenal. We couldn't find soy paste in Kitchener, so we used soy sauce which still worked out. So good. Thank you Sam and crew. This and your panini from last year is a family favorite.

I made the chicken portion of this last Saturday since the rain kept us from grilling. This turned out amazing. The lemon really made the flavor "pop". My wife and kids loved it, this was awesome the next day as a leftover too. Thanks for another great recipe.

For anyone not looking to use soy, try adding some shiitake mushrooms in the roast or change the butter sauce to use anchovies, take some salt out of the mix. Both add umami without the soy!

11:42 Sam, there's a better way to do the spatchcocking part where you flatten the chicken: • first, remove the wishbone. • second, use a knife to cut the membrane behind the keel bone, then as you open up the chicken, you'll see the bone exposed. It is going to have a dark red color. Grip that and rip the whole thing clean off the chicken. It gets in the way of carving the chicken anyway, so it's a good idea to remove it if you want the chicken to be flat.

I made this, got the butter underneath the skin, used a thickened teriyaki sauce instead of soy sauce, used a rosemary garlic and sea salt seasoning cause i didnt have rosemary. It came out as the most crisp chicken ive ever made in the oven not as crispy as pan fried chicken but up there.

Just made two of these for dinner last night. All the guests loved it. I did make a rookie mistake of adding a teaspoon of Soy sauce rather than paste, as I didn't have the latter on hand, only to realize soon after that butter and liquids don't mix! It's like trying to combine oil and water. So the marinade didn't go on the chickens as well as I wanted it to but they were still juicy, delicious and flavorful. Thanks STCG!

I gotta say it. When you cut lemons and cut through the pits, you're adding bitterness because when pits are cut they are bitter. It takes time, but it's best to cut the lemon and remove the pits as you go.

That's a very creative spatchcock method. All you need to do when the backbone has been removed is look for a triangular piece of cartilage where the breastbone begins and make about a quarter inch cut through it. That will released both breasts allowing the chicken to lay flat without the need to perform chest compressions that will potentially splatter chicken liquid around your cooking area.
