Hi Beth!! I recently moved from Chile to Canada and yesterday I hosted a dinner for some friends for the first time since I got here a little over a month ago. I can't tell you how nervous I was: new electric stove v/s my old gas one, different ingredients, PhD student with little time to shop etc etc. Anyways, this recipe was A HIT. Hi, Beth! I'm Italian and I can say that we don't traditionally put ricotta cheese in lasagna. At least, my mom has always used bechamel sauce and I love it because it makes lasagna really creamy and delicious.

Hi Beth! I was born and raised in Venice, and we do not put ricotta in our lasagna, just besciamella. However our besciamella is definitely thicker than yours and we cook the ragù for two to three hours :)

For me, & I am non-Italian lasagne adorer, it’s not a true lasagne without ricotta. Seasoning the ricotta is one of the most treasured activities in making a lasagne from scratch: you add 2-3 excellent, free range, organic eggs; fresh flat-leafed parsley leaves, finely chopped or minced; & ground fresh black peppercorns & good salt. I suppose you could add different spices - I love the idea you have of adding fresh thyme & fennel seeds to the sauce - but, up to now, I’ve relied solely on s&p, but special s&p. I am so happy to have found your show‼️ My family, on both sides, are French Huguenots & I know the 23rd Psalm in French by heart❣️I’m so impressed with your wonderful, conversational French❣️

I have lived in Italy for 5 years and have found that it depends on the region. For people in a certain region the ricotta is a must. It's criminal not to do that. For some they use a creamy béchamel sauce.

Great recipe Beth ! Thank you so much for sharing! I know it's not original Italian but in Greece when we make lasagna we add bechamel sauce just like you do. The only difference is we add egg and cheese in it, and it's still delicious of course... So I guess there are many options to this recipe! ☺️

I'm Australian & my late mother taught us to use Béchamel sauce but ours is a lot thicker & she also used sour cream mixed with other goodies just before the final lot of cheese, it's to die for! We have no Italian heritage in our family. It's also nice to be able to see each section of the lasagne and not have the béchamel sauce mixed in with the meat sauce, if that's going to happen then why go to the trouble of cooking it as no one will know it's there or how you lovingly prepared it? I still enjoyed watching how you made yours though Beth! I enjoy watching recipes we make being made a different way as another way might be tastier. Thank you for your recipe, if I can find the ingredients I'll give your recipe a go just to see how it tastes as there's no right or wrong way to cook, it's all just different😊

Hi Beth, yesterday mum told me that i have to find out what to cook for dinner... I really love traditional hungarian dishes, but they are so boring to me now since i am eating them week by week. So today i've just shown this recipe to my mom, and she told me that it looks so delicious, but she also said: " It doesnt look like a "ready in one hour" meal " but she promised that we will make it next weekend. I hope we will create a tradition too (if se wont forget it 😂)

Hi Beth! I actually do my lasagna with bechamel....instead of ricotta because ricotta here in Panama is quite expensive and I dont like using cottage. Now, bechamel goes great with lasagna too. And its less time consuming and less expensive.

I agree with your Dad using ricotta cheese gives the lasagna richer flavor and creamier texture I used to do Bechamel sauce but I have switched to Ricotta instead and I am not Italian.

This looks like an amazingly delicious lasagne recipe! Thank you!! I'm Italian American and we always use ricotta when making lasagna. I never heard of a white sauce with lasagna before. Maybe different parts of Italy make the dish differently? My grandmother came from Minturno and my grandfather came from Bari.

Hi Beth I'm Italian / Australian and I grew up with the typical Italian lasagna. Each region makes it differently, my mother doesn't add ricotta to her lasagna, but she makes her creamy besciamella Sauce ( as she calls it ) without fail. She used her typical 5 hr Italian bolognese sauce, and layers it just the same as you do and sori Kyle's some parmigiana Reggiano cheese over the sauce, layers and repeats. Your lasagna looks delicious. I'm so sure Vincenzo makes it differently too. 😊😬

Hi Beth, Barbara here, just recently found your web site and I have been enjoying it very much, so much so that I will tell you about a little secret for your meat sauce that an old Italian lady told me when I was first married. Put a slice of orange peel in your meat sauce whilst cooking it. It really does elevate it to another level. Fish it out before serving. Where I come from, which is California, Ricotta is included in the Lasagna. However; that being said, I am all for trying something new. In fact, I often find that I like the new twist even better than the old tradition. I look forward to making this with the Bechamel.

I'm Italian (Sicilian/Calabrese) and my grandmother only used bechamel.. the ricotta is an Italian-American thing.. they don't use it in Naples, Italy where it originated

i'm italian and my mom makes lasagna every sunday (so tomorrow i'm gonna eat it yaasss) . you can use parmigiano spread on every layer and ...just a trick ..pour a little milk to the corners of the pan after you finish the lasagna before you put it in the oven and doing this the edges will not dry to much

I'm married into a Sicilian/American family and they use ricotta. I thought bechamel sauce was used in Greek Pastitsio which is similar to lasagna. Either way... yummy 😋

Growing up my mom always used ricotta but I hated it!! Now when I make my own I sub cottage cheese for the ricotta and I love it so much more!!!

Ricotta is what I'm used to, and it's much different from béchamel. Although I've never tried bechamel. So I think it's more traditional to use ricotta, and maybe mozzarella too.

Fascinating! It's so funny over here, especially with Italian American Immigrants it's a must-have. I wonder if that's because most of the American Immigrants came from the Southern parts of Italy, so maybe it's a Sicilian thing? This is the region my Dad's family is from. :)

Bulk spices are the way to go! Check the bulk section at your grocery store. Spices are way, way cheaper in bulk. What you're really paying for is the nice little spice jar packaging. The same goes for yeast, I can fill up my old yeast jar for $1.50, if I bought a new jar it would cost me about $5! I would bet you could get the bulk fennel seeds for at least 50% less than the jar price. I just keep mine in refillable spice jars or small mason jars.

I'm from Bologna where lasagne originated. Traditionally we use a bechamel sauce. So you got it absolutely right! In fact, I've never seen ricotta in lasagne here. I've also never seen an American use a bechamel in their lasagne, so props to you! :-)

Oh my goodness!!! To satisfy my hub and 14 yr old son, I used the bechamel WITH some ricotta cheese and they went CRAZY!!! I never knew that bechamel could make such a difference! Never making lasagne any other way.

Hi can I make this the day before? How would that work? Could I do the meat sauce and the cheese sauce and place them in separate containers in the fridge? Then heat them both up the next day and layer the Lasagna and bake?

Great question! I think the flavor is better personally. A bit lighter not as acidic. It also adds a kind of sweetness to it as well. But really you could use either wine. Funny that's another point my dad and I debate, he always asks me the same question! LOL! Enjoy!

Oh sure! You could use ground dark meat chicken (i find it's more flavorful and less dry than the white meat), or Turkey and ground chicken or Turkey Sausage. And yes of course homemade noodles would also be fantastic! :) Enjoy!

You said that if you don't drink you can substitute the white wine, but doesn't the alcohol usually burn off when you're cooking it?
