I had chemo back in 2004 and I went through a phase that everything I ate had a metal taste, until a friend brought me a pan of lasagna. The tomato sauce blocked the metal taste and I ate lots of Italian food for several months thereafter. I was so grateful for Italian food.

For a better option to sugar in your sauce, use a pinch or two of baking soda to neutralize a little of the acidity in the tomatoes. This is a fantastic option for people watching their sugars or those who don't like Americanized sweet tomato sauce.

I made this for Mother's Day for my wife and WOW, it turned out perfect! In fact, the ingredient ratios for a 9"x13"dish were just enough to meet the pan height without it spilling over in the oven. I split it into 8 servings, each one a meal unto itself. All my portion slices held together wonderfully because I used John's recommendation to let it rest 30+ minutes (I let it go about 45 minutes and it was still warm and delicious). I can't thank you enough for making Sunday dinner a big hit this year, John! Thanks for making such a great channel and being a great cooking teacher! :)

A hack I learned was to make smaller lasagna by assembling in loaf pans. Right now, it's just me and my mom, and the large lasagnas we made would mostly go to waste. Make one for supper, freeze the rest, bake the others later.

@@uwubelle817 To freeze, let the mix cool, it should be fairly cool anyway since you didn't bake it, but I don't know how soon after making the sauce you're assembling the lasagna. Great recipe. Pretty close to my Moms. Sauce, of course needs to simmer for at least 3 hours to slow cook the tomatoes until sweet, but ingredients are spot on. I use tomato purée with no tomato paste. This makes the sauce smooth and less acidic. Construction. When placing lasagna pasta in layers, I was taught to alternate the directions of each layer. Horizontal, then vertical to knit the layers together firmly and assist in cutting/serving a compact portion in plating. I also make a low carb version with baked, breaded (or not) eggplant. The eggplant adds an amazing flavor to the sauce, sausage and cheeses. My Italian Mom would like your lasagna. That says a lot! Cheers!

Good looking dish! Our families don't like the ricotta cheese. My mom substitutes cottage cheese for it, and it is okay. My wife tried alfredo sauce... OMG is it good! It isn't a traditional "layer", but everyone loves it. Another trick my wife found was to layer the cooked sauce/ sauces with uncooked noodles in the crock pot/ slow cooker all day... and the pasta is perfect by adjusting density of pasta with moisture content of sauce. We just cook the meat sauce the night before with our other supper, assemble in the morning and cook on low. Super convenient after working all day, and super good with some garlic bread and a caprese salad. The caprese sauce/ dressing is 1/2 cup honey, 1/2 cup balsamic vinegar and 1/2 cup dried basil, boil until reduced by 1/3rd, strain. It looks like black honey - It tastes like heaven. It refrigerates for months... Keep up the wonderful vids! Thank you.

I go big when I do my lasagna, I don't do the chop everything into mince. It still looks great. Cooking the ground beef separate from the sausage is a good idea too. So you can drain any grease. Also adding some olive oil to the boil will help keep the pasta from sticking. I love the egg in the ricotta. I will be trying that one. Very cool watching how others put it together. The next dish I want to master is Halupki.

Dear John, we absolutely love you - the whole family sits mesmerised watching your recipes. I need to be blunt this time. This is not the actual original lasagna recipe, and it could easily become so with a few little changes. First, the Italian herbs are not EVER going into the tomato sauce. Proper meat sauce for pasta (lasagna is pasta), is made with garlic and/or onion, carrot and celery, which are browned in olive oil, then you add the meat (beef and pork are great) and just then you add the tomato sauce with just a tiny bit of tomato paste. Secondly, the ricotta with egg is unheard of - please use bechamel instead, you will be much happier. Parsley is not necessary, oregano is not necessary, just add a few leaves of fresh basil when the sauce is ready. We are telling you this with all the love that we can muster. If you ever come to Florence, we will be so delighted to show you around and eat with you. Ciao, buon appetito.

MADE IT: I used what I had on hand (with the exception of the Ricotta). I didn’t follow the measurements because I made a larger version to feed 6 adult men plus 3 young boys, plus myself. It turned out okay but lacked a considerable amount of flavor despite the fact that I fried the paste plus used a popular brand of jarred pasta sauce. I only had ground beef and for some reason I accidentally bought “no boil” lasagna noodles a while ago, which I didn’t even know existed but they worked despite my hesitation using them! I added diced green peppers with the onions & garlic mixture, a splash of red wine and I also added several other dried spices too (oregano, basil, thyme, onion powder and garlic salt ). In hindsight, I would have skipped the sugar because the jarred sauce was sweet enough. In addition, I added grated parm to the ricotta mixture plus black pepper. When layering, I added shredded mozzarella on top of each layer of ricotta as well as to the top. I baked @ 425 for 30 minutes covered, then another 15 minutes uncovered and broiled for 5 minutes to brown top. Served with a cranberry garden salad with feta, English cucumbers, shredded carrots & red onion. Toasted garlic bread to finalize the complete meal and poured the red wine for the adults. Everybody was happy with it but they did say it needed more flavor next time!!! UGH - not sure what else I could have thrown at it…..maybe I’ll try mixing the meats???
