Aw, So glad you are enjoying the videos! Yes almond meal is the same thing as finely ground almonds. In fact if you can't find almond meal in the store you could take blanched almonds and ground them up in a food processor.The reason I like the combo of flours is because they each contribute different things. The almond meal gives a nice light texture, while the rice flour provides structure because it acts more like real flour. Otherwise the muffins would be too delicate and crumbly :)

I modified this recipe for vegans and it was a HUGE hit! I replaced the 3 eggs with 3 flax eggs (3 tablespoons ground flaxseed with about 3/4 cup warm water) and 1 cup of soymilk. Baked for 20 minutes; they were perfect! I also used starberries, mangos, peaches, and pineapples to give it a little oompf ;) If I had applesauce I would have attempted oil free but I happened to be out when I made these. Sure you could use grapeseed oil or olive oil, any oil really will do the trick. They do need some type of oil to bind together and I prefer the oil over the butter :)

These were delish! Not sweet at all really, but that's to be expected. I also used all-purpose flour and corn meal (1 cup each), added vanilla extract, used strawberries and blueberries, and greased the paper muffin tin liners. About 17 minutes of baking was enough. Thanks for the recipe - I'm looking forward to enjoying these for breakfast!

Hmmm that I'm not sure about. I have never baked with coconut oil before. I know it liquifies when it heats up, but I would curious what would happen after the muffins have baked? Would it have a strange texture? I have used olive oil and grapeseed oil before and they work just fine too :) In case you want to play it safe? :)

They'll last about 4-5 days. But better to pop in the freezer if you can, they will stay fresher that way :)

For me it's just finding other flours that aren't comprised of wheat. So rice flour, almond flour, garbanzo bean flour. Wheat can just react in a way that can add a lot of pounds to our bodies, especially around our middles! That when I want to slim down I just avoid anything with wheat in it (pasta, crackers, bread etc) and it always does the trick!

Switched out the raspberries for blue berries and instead of 1 banana I used two and instead of almonds I used walnuts. Love this recipe its very interchangeable :)

I do that sometimes. But because yoghurt makes the batter denser, sometimes I usually add about a 1/4cup more yoghurt to make the batter less thick.

If you use enough bananas the can even substitute the eggs. Vegans use Soy flour, bananas, applesauce and stuff instead of eggs. Always depends on how much fluffiness you want. Bananas are great for dense moist muffins.

You can definitely use AP flour, but I would stick with the canola oil because in my experience it makes for a lighter muffin. As for the almond meal, you can just ground almonds in a food processor or whatever else might be appropriate for that.

And i love that you dont have the stereotipical american sugarbombs with ingriediens noone in my family likes like many other american youtubecooks. For most europiens i have met amys dont have a foodculture besides fastfood and you prove the oposite. Thanks for all the hard work i hope you will continu too inrich our days. P.s. Hey this looks soo yummy!! But when youre adding the frozen raspberries to the muffin mix, do they have to be dethawed? lol I'm kinda dumb when it comes to cooking hehe =)
