This is like hitting a gold mine of Chinese cooking. I've eaten in a lot of Chinese restaurants over my many years. My wife and I agree that with these basic sauces we can duplicate the taste of many of the things we've eaten. A little experimenting will also lead to other familiar flavors. Use your basic instincts and go for it.

I’ve made 3 of these and really enjoyed them! I think the sesame peanut one is a favourite but it requires an additional lighter sauce alongside for my taste I double dip and that way I get a garlic/soy taste and this wonderful rich sesame one. I bought the fermented bean curd, same kind you listed and I’m so happy I tried it! Very unique and gives a wonderful taste to foods! I recommend trying even when it’s unfamiliar because I 🥰 this bean curd!

Your recipes changed my perspective on home made Chinese food. Your tips are the most valued, as you teach from your experience. Thank you for your work. I was one of the early buyers of your wok. Made the dumpling soup last time, but despite your warnings we did not knead the dough enough. Not so much laziness as arthritic pains, lol. Just yesterday we made another 60 batch x2, (mixed), BUT with the love of a neighbours mixer and "kneading hook", the outcome was a velvety smooth totally non-mushy dumpling. As for your dipping sauce recipe, it could not have come at a better time...we were "wonton" them. Now, we will go shopping for some of the needed ingredients. As always thank-you, for tonight's guests will no doubt be entertained and wonton more.

Seems like CILANTRO is the only thing missing in our pantry, for your recipes. Is there any substitute we can use ? I know you mention garlic or shallots, but would parsely or celery leaves suffice?

Looks delicious - all of them! One question - when you say "white vinegar" or just "vinegar" do you mean white rice vinegar? Because western-style white vinegar is very sour by comparison.
