3 eggs
1/4 cup diced scallions
1/4 cup of shredded carrot

2.5 Tbsp cooking oil

1.5 / 0.5 pound cooked leftover rice
1/2 Tbsp minced garlic
3 Thai bird eye chilies, diced
1 small green chilies, diced

these all looked fantastic, but that last one I MUST try as soon as possible. Lamb isn't easy to get by me, but beef or goat should work. It's getting cold by me and this dish is going to be very comforting. Thank you!

There’s definitely a difference. My father never uses a rice cooker and his rice is so much fluffier - in fact I think most of my Persian side of the family steams. I like my Japanese rice cooker for convenience and it’s still yummy, but you can definitely taste the difference.

Rice cookers are unnecessary, but easy to use. So, I understand. A pot on a stove works fine for me.

I'm from Ecuador, and since I was young, I used to make egg fried rice, although I didn't know it was a real dish either. Food really is the universal language (it's not love... sorry haha)

My few recipes for fried rice: - fried rice with garlic & broccoli - fried rice with green peas & scrambled eggs - fried rice with mix of veggies (frozen ready mixes like “Mexican style”, “Italian style” with different mix of veggies) - fried rice with kimchi, soy sauce and fried egg on top Sometimes with chicken or prawns but mostly I like simple vegetarian versions. Always Jasmin rice, the best for me.

That mutton rice pilaf looks AMAZING. Every time you make it, I want it so badly! I may see if I can get the ingredients for it in a couple of months and make it as the weather gets cooler. Just from curiousity, do you think that is a dish that might be okay in a slower cooker? Just the mutton part of it, I can understand needing to cook the rice not in a slow cooker, but if I could do the first part (for example) in the instant pot set on slow cooking, then switch to more active cooking and cook the rice, that would make it more accessible as a weeknight dinner recipe.

Hi Mandy! Please consider adjusting your microphone settings. There’s a lot of “clipping” which is that fuzzy sound when your voice gets louder. Turning down the input gain will help improve the quality of your sound, and then you can turn up the volume during editing later 😌

@@SoupedUpRecipesyes, I hear clipping throughout most of the video, usually when your voice raises slightly. It’s not terrible but it’s there. I love watching your videos before bed and I usually wear headphones, so I can hear the fuzziness pretty clearly.

You could crack an egg into the tomato rice and mix!!!! Thats what i do! Also for anybody foreign watching you can serve the tomato and meat seperately, as in not mix it with the rice and pour it on top of the white rice or fried rice or noodles or whatever... depends how youre feeling i suppose... you cn sub the beef for any meat of your choice i also add a teaspoon of white sugar OR heinz tomato ketchup to add abit of sweetness to it depending on how sour the toms are its essentially a variation of the Chinese tomato and egg dish!!! i also because i love heat and its lovely for a cold day add chilli oil on top!!!

Which part of China does that last lamb/mutton recipe come from? To me, it's like what my roommate from Kashmir eats - like, the recipe has an East Indian influence. Maybe from the Silk Road?

What's an alternative for oyster sauce? I'm allergic to shellfish and can't have it.

I grew up eating regular oyster sauce, but developed a shellfish allergy in my 30s. I switched to vegan oyster sauce and love it just as much as the original in my sauce base. The difference is the vegan is made from mushrooms rather than oyster. Trust me, it's definitely a perfect substitute.

It's not centuries-old 'traditional', but then again neither are tomatoes or chiles. Spicy 'luncheon meat' has been commonly used in Asia for the past 75 years or so (post WWII), but no doubt they used their own types of spicy meats long before that.

@@chickenlover657 Oops, I meant 'thousands' of years not hundreds (centuries). 'Traditional" Chinese recipes are ones considered by food historians to be at least 2,000 to 3,000 years old. And besides, food they ate just last week would still be considered 'actual Asian cuisine'.

@@kindabluejazz That is not correct. And as a historian, I guarantee you that although traditions CAN be ancient and stretch back into the past by centuries, even millennia - this is not necessary. The very word "tradition" is a latin deriviative meaning simply handing over, passing down, transferring, leaving for safeguarding. So you can actually have pretty "young" traditions spanning only a few generations. Fact is new traditions arise, just as many old ones die out....I just never expected to find spam on a chinese menu. As for "food historians"...please! These are hobbyists, or at best gastronomes. There is no such academic discipline as "food historian" studied at any university.

Is the portable gas stove able to generate comparable heat to restaurant kitchen burners for the wok hei ? Also, is Souped Up Recipes taken or single ?

You can get very high heat portable gas stoves, like 13,000 BTU ones if you want good wok-hei (normal ones are more like 4-5K BTU). They are commonly used in modern Chinese cooking.

Sort of, but not really. Scallions have no bulbs on the bottom. Green Onions will have a bulb, and spring onions have a larger bulb.

Scallions are baby onions, spring onions are toddlers, bulb onions are 10 to 12 year olds abd full size onions are adults to put it in human terms. (Although pearl onions are actually babies.)

Oh Mandy, i didn't like these recipes unfortunately. I cooked these and aren't to my taste. They didn't taste like the take aways or restaurants i go to..Being honest.. Can you make something that you've haven't made before. The sound of chopping etc couldn't hear you correctly sounds bad, can you adjust your mic. Thank you! ❤

@@garnettspontini1011 it's not for the faint of heart, it is delicious. I describe scrapple as all the parts of the pig you don't see in the market boiled down with cornmeal and spices to form bricks when chilled. Fry it in a pan and I'll either eat it with runny egg yolks or with ketchup.

@@munkytaint666 Spam is delicious when prepared well, and pretty much just pork and spices (not some long list of chemicals and preservatives like some may think). It's pretty much got in it what all pork sausage has in it.

Primitive cooking of rice (and other grains) seems to have been done by adding hot stones to wet grain in a woven basket, and later by putting grains and water in a fireproof pot over a fire.
