Not a fudge maker but it seems that constantly stirring keeps the temp from getting where it needs to be at soft ball stage. IDK

It does seem counterproductive however sugar burns easily. The trick to keeping candy from burning is constant stirring until the desired temperature is reached. I always use a thermometer vs the cold water/ball trick, less stress with the thermometer.

You need to stir it, scraping the bottom, so it doesn't stick. But, you don't have to stir it fast. Just enough to stop it from burning.

This is just like the basic fantasy fudge recipe that is on the back of the jet puffed marshmallow cream jar. Once it starts to boil it takes about 4 minutes until you get it to 234° then you add a 12 oz bag of the semi sweet chocolate chips and the container of the marshmallow cream and walnuts if desired, then 1 tsp vanilla. I make this fudge every year for Christmas.

There’s ‘haters’ and then there’s people who are generally concerned for your health. Don’t have to be ‘stick thin’ but you can be a lot healthier than you are and you’d probably feel better for it, maybe don’t take so much offence and make some healthier recipes?

Evaporated milk in the States has half of the water content taken out. and shelf stable, In order to use it at the table, add water back in. The ratio is on the can . The "cooking/baking milk" is what they call it, ... good to have on hand.. and FYI: It is not the same as sweetened condensed. I don't know what it would be called in Germany or the rest of Europe.

Smoothies are one of my favorite candies but I haven't been able to find them in any store for years now. I found your recipe and followed it exactly but mine came out very soft (still tasty). Yours seems drier and firmer than mine. The only thing that was different is I used Marshmallow Fluff as this is the only marshmallow creme I could find at my grocery store.

I haven’t made this but I have made toffee. I always heard that you do not stir once it starts to boil. Also, that you have to be careful with what is on the side of the pan as this can make the end result gritty. Is this not true also with this fudge?

I was taught that when you make any kind of candy, including fudge, as soon as it starts boiling, STOP STIRRING - stirring makes it grainy. I have found that to be true. Just an FYI.

Sara, for yalls coughing, steep some green tea or celestial seasoning "vitamin C sunshine" tea bags then add some freshly grated ginger, grated lemon rinds/zest and juice, 2 garlic cloves,. raw honey to taste, and some ACV...then, after steeping, add a couple spoonsful of elderberry syrup.. Drink some everyday, about 4 ounces.. Make a BIG batch, enough for you, Jaimee and Mrs. Betty!👍🏿

My family has had fudge for Christmas as long as I can remember. I've been the one taking charge to make it for the longest time. I usually do chocolate and peanut butter but I'm going to have to try this. It's also not Christmas without sugar cookies and snowballs and caramel corn. And a big basket of apples, oranges and nuts to help offset some of the candy lol

This year my 8 year old daughter and I made 16 pounds of sugar cookies and 3 pounds of gingerbread cookies, fantasy fudge, 2 recipes of peanutbutter fudge and pretzel crack candy. We shared this with many members of our family and friends. Hard work but worth it bc everyone enjoys it so much. This looks good!
