Have you ever used an Instant Pot? I use mine to make pulled pork all the time. It onlytakes a couple of hours. I bet it would make a wonderful brisket as well.

Glad to see your video; I've missed your presentations. Where does one get a brisket that size? A stand-alone butcher, or special ordered from the butcher counter at a supermarket? I tried to smoke a corned beef brisket once -- only once! It had the consistency and taste of burnt rubber. Here in NorCal, that's the only form of brisket I ever see.

Bexar.....I get confused when it comes to freeze drying things, maybe because when dehydrating you have to watch the fats and oil contents. Is that still an issue when it comes to freeze drying. How does it work for things like baked zettie or lasagna when you freeze dry it. What other casserole type meals have you tried?
