Can't we all just agree to disagree. As long as I'm doing the cooking for my family and retreat members I will not wear gloves (unless it's hot peppers) and they are all fine with it. Blessings!

That meatloaf recipe looks absolutely delicious! Do the spices intensify the longer it stays canned? Do you/your daughter prefer raw packing the ground meat versus packing cooked meat & pressure canning it? Btw your daughter is simply precious! It is wonderful to see family getting together to help in the kitchen.

Terri D yes go easy on spices they get stronger with time. I prefer canning cooked beef. The off putting smell when opened doesn't effect the meat it's just the result of pressure canning any fat. Blessings

@savgal1211 All great points.I have been canning meatload since the 80's without any issues with spoilage or bacteria. You have to do what you believe is best for you. I for one have seen the changes in the FDA over the last 30 years and don't believe it's done for the benifit of the individual but for the benifit of corporations. But the choice is yours to make. Tried this worked great, Thank your daughter for me. The recipe worked great. I already tried a jar (couldn't wait). You inspired me, I have been doing vegies for years but lacked the confidence to do meats. Now I have gone on a canning frenzy i.e. pork,chicken and beef. Someone even gave me some deer meat. Great video and I'll bet with 6 jars that cost way less to make than baking a loaf in one baking pan. Very efficient and good for a bugout scenario! You could feed alot of people with this idea away at a campsite!

Where i live, i think meatloaf is cheaper than mincemeat... Although we have some extra cheap brands of mincemeat, but they literally smell like a barn when you fry it in the pan, LOL! If you want to feed a small army, buy dried beans and lentils, add some taco spice, and boil it to a stew. I usually add some corn at the end, and have sour cream, cheese, and salsa with the tortillas/taco shells. Not as good as regular tacos, but still a pretty decent meal for days when i dont have a lot of money. Also works nicely as a substitute for meat in lasagna recipes.

I found this very interesting. When I was a young girl, I canned for 4-H. Unfortunately, I have not canned anything in 45 years. However, with today's times, I am considering it. I have never canned meat, but I truly like your meatloaf method!!!

Loved this! We make our meatloaf with 2lbs beef to 1lb of ground sausage, some tomato powder and celery, but with no crackers/breadcrumbs (gluten issues). Came out fabulous!

Having been gf since 1972 i learned that some instant potato flakes work beautifully to replace bread crumbs or cracker crumbs. Per Jacque Pepin he uses instant potato flakes to thicken cream soups. Brilliant chpef!

I'm so sorry I remember making the video but it appears that's one of the video's I lost when one of my cameras bit the dust. Just make patties no wider than the mouth of the jar. Separate with parchment paper and stack in the jar. Process as you would meat loaf. Blessings!

WOW! These turned out GREAT! I did 2 batches of my own recipe for parmesan balls in pint jars. Used a TBSP scoop for the first batch and 1/2 TBSP for the 2nd. They are DELICIOUS! Stay good until seal breaks but texture changes at about 8 years. Controlled temperatures keeps all foods better texture longer. Blessings!

I see Comments here about you can't can this or that, I live by the Amish in Pennsylvania. Any kind of meat should be canned in a pressure cooker. I go the full hour and a half for a quart and 1 he 15 minutes for Pint. Etc. you can buy balls canning book that details how to do a lot of things. I usually have a teaspoon of salt as my preservative for any quart size of the jar people should never water bath or oven can meat even if you cook it . I almost died of the complobacter infection they thought I got from handling raw chicken. Also people don't have to boil lids you just wash your jars and lids so that they're clean and when you're running a pressure canner it 10 to 15 pounds of pressure that temperature inside is at least 250° it kills everything. The Amish laugh where a lot of the English can stuff because they add a lot of unnecessary steps a lot of times but everybody has their personal preference I can because I had stomach cancer and I find my own foods are way healthier for me than anything I can buy and I raise my own food on my farm this year I'm getting into varieties of chicken turkey rabbit venison pretty much you name it. I can't stand GMO pesticide in our food and the public should be outraged that it's in there because it is in everything honey eggs meat chicken you name it anything that eats corn or soy beans that are GMO has pesticide in it we can see the effects on our farms that the bees are disappearing and there are no mosquitoes. Nothing like there used to be , It's very sad that we allow corporations to destroy the rest of our lives and give us cancer. Start your own food but make sure it's safe to it keeps for a long time. I have done things other ways but it usually stuff I use up immediately within a week or two.

I just want to thank you for all of your work. I'm putting my meatloaf in the canner as soon as the carrots are done! We have 6 kids and one going to off to Ohio in a few weeks. I'm sending her with cans of food that she loves so maybe she won't get so home sick. We raise our own meat and losted a hole freezer this summer when one died. So canning some of the meat will save us from loosing a freezer full again. Thanks again. Woodimes :)

After watching this I got a good deal on ground beef. So I dry canned some and decided to try doing the meatloaf. But I used the one and a half pint jars they are straiter. They worked very well. My husband was serprised how good it looks. Now he cann't wait to make sandwitches with it.

My husband loved the meatloaf and is very happy that we will have this on hand anytime he wants. Last night was our test night, I popped the first can open and fixed instant mashed potatoes with veggies and tomatoes out of the garden. Dinner was done in less than 30 minutes. I don't think you can get in the car and run through any drive through in our little town that fast. Also the meal cost about $3.50!! Sure beat paying the $15.00 for the very unhealthy fast food.

For people who are commenting about the gloves....that's personal preference. it really only makes a difference if you are making for other people. Keep in mind though to use VINYL gloves. Anyone can develop an allergy to latex at any time without warning. Latex residue will remain in the food you prep with them. Also, go for powder free gloves. Amazon has huge selections of gloves--vinyl and nitrile for amazing prices by the case. It's a worth-while investment. I'm a RN for in home pediatrics (life support, dialysis, etc). Sometimes my employers will force nurses to buy our gloves for various home care cases--so I order a bit from Amazon. :) Handy to keep a box in your car too btw!

I tried this last night. I can't get hamburger deluxe around here so I used a comparable seasoning, and then I used 2 1/2 cups of stuffing mix, that was close to expiring, instead of crackers. My yield was 4 quarts, and a 12 oz. which I opened. Tastes good, looking forward to seeing how the flavor changes over time. Going to do 4 lbs of bacon, and some ground beef later today.
