Hi, this is the season of Tender bamboos and there is a habit of eating tender bamboos atleast once in a year. Eating tender bamboos in the rainy season is good for health. It balances the heat of our body. The nature gives the best food according to the season. So this is available only during rainy season. Only the white part of it can be used in the food and it needs to be peeled off properly. chopped pieces are soaked in water for 3-4 days to remove it's odd smell. Then the pieces are cooked. Usually we add sprouted nuts or jackseeds with this curry. Spices are added without frying, and ground finely with grated coconut. At the end, ground paste is added with cooked pieces and boiled well. Then tempering is added. This curry is eaten with rice, chapathi, dosa etc.
Ingredients:
Tender bamboo pieces
grated coconut-1/2
dhania seeds- 2 tsp.
jeera seeds- 1 tsp
Garlic- 3 cloves
turmeric powder
red chillies
red chilly powder
salt, tamarind and jaggery
curry leaves

We use chana with bamboo shoots and there are preparations with and without onion and garlic. Nice to know this recipe. And true as Sudarshan said all seasonal vegetables and fruits must be had atleast once 👍

There are over 200 varieties of Bamboos in India alone and some 50 variety are used like vegetable for centuries in every country.some variety has very large Sprouts And even at 2 feet height it may weigh around 10 kg.Chinese are the largest consumers. They are frozen for long shelf life.Preserved in brine. Or even pickled in brine or Vinegar.. basically two varieties..high fiber one and less fiber ones. Small stub sprouts have less edible portion.More fiber ones are used to deep fry like SEVAI( NOODLES) after crushing and squeezing , removal of water.Lentil flour is sprayed with spices and salt and deep fried.So fiber sprouts by chance you buy from market need not be wasted.( the parts of the sprouts may be matured with fibers unfir for dishes) It's seeds are used like Rice.Leaves for medicinal purposes.Paper 8ndustry depends on REED BAMBOO for good quality paper. House construction Nd furniture making is also it is used. Nutrition wise a tender bamboo is not of much help.But cutting one is like killing a baby. Some thing which can grow 40 meters is killed when it is just 4 feet!

Firstly thank you so much for this recipe ♥ ಯಂಗಳ ಬದಿಗೆ ಅಂದರೆ ಶಿರಸಿ ಕಡೆ ಕಳಲೆ ಹೆಳ್ತ್ಯ. ಕಳಲೆದು ಪಲ್ಯ, ಹಷಿ, ಹುಳಿ( ಸಾಂಬಾರು) ಬಜೆ ಕೂಡ ಮಸ್ತಾಗ್ತು. ಸಣ್ಣಕಿರ್ತಾ ಸಿಕ್ಕಾಪಟೆ ಮಾಡ್ತಿದ್ದ, ಈಗ ರಾಷಿ ಕಡ್ಮ್ಯಾಗೋಜು. ನಿಜ ಈಗ ನೀವು ಮಾಡಿದ್ದ ಪದಾರ್ಥ ನೋಡಿ ಬಾಲ್ಯ ಎಲ್ಲ ಒನ್ಸಲ ನೆನಪಾತು...

Kalale should not be used immediately as it contains cynide (Visha).Havyaks are masters.They know how to make dish out of anything and every plants available in forest.

Wow super cool. I have eaten bamboo shoot in North-East India but did not know that it is also eaten in Kerela. In Japan also, it is consumed a lot as a seasonal vegetable (March-May) for spring not summer. It is called in Japanese “Take no Ko”. Take means “Bamboo” and Ko means “Baby”, so meaning wise it is exactly as Kanile.
