I'm not a 3d artist but I found a cheap solution for filling in the basket problem, I just took one of these plastic scoops usually supplied with sports nutrition (protein powder etc) and cut off the bottom of it to the exact diameter I needed and it works perfectly. The good thing is that you can make it the exact size you need, since the scoops are usually cone shaped. Not exactly fancy but very effective!

Done mastering the 3 cups, this morning I go back to 2 cups and yes it made me a better balance cup. I think its due to the less heat it requires to the water to come out thus the moka pot body doesnt heat up to temperature that affect the taste as soon as it reaches the upper chamber

Hi Matteo, I agree that 2 cup pots are great. I have a 2 cup Brikka Moka pot and fill it with my favorite coffee Black Butte Gold from Sisters Coffee. It fits 20 grams of coffee in basket and I use 110 ml of water. Pretty strong with chocolate and almond flavors.

I have been using the 3 cup Moka pot for many years to make my latte in the morning but after seeing your video, I’ve switched to the 2 cup. Less caffeine and more economical but the taste is still great. Thanks for showing us the 2 cup option.

in moka pot, "1 cup" equals 1 shot of espresso, which is about 40ml. So, a 2 cup moka pot will make roughly 80ml of coffee

Oh , I just bought Bialette 2 cup Moka pot and loving it. I ordered 3 cup one to as a replacement the 2 cup one . Which one should I keep ?

@@Royalbob123 I mean, if you love the 2 cups, I would keep the 2 cups. But then if you need to make coffee for 2 or you want more coffee, you should keep the 3 cups as well

The 6 cup is our daily driver but I used my tiny one just yesterday. It is a different brew for sure - as you say. It seemed extra good yesterday. Mine was my great grandmother’s. It has a convex screen with it. I have to pack it a bit more gently to compensate for its tamping effect. Great vid! Great advice! Thank you!

I have the 2 and 3 cup moka for induction, but I'm using them on gas. The taste of coffee in the 2 cup one is the best of all I made so far. Can't say the same for the 3 cup one yet, it behaves beastly for now, unlike it's smaller sibling.

You could try to put less water in the 3 cups. That might helps you to reach a similar result you get with the 2 cups

Esspresso dosing ring for 2 cups - discovery of the year: I use the aeroprress funnel. It fits perfect and work very well. You should try. 😎

To be honest the first time I get my 2 cups moka pot I feels like "ugh I think I'm buying the wrong one" since my plan was trying to make more coffee on bigger cup. After that i watch your previous video about moka pot I'm glad that I bought the 2 cups one. even with less coffee I got, I'm satisfied with the taste to be bolder. . this video make me glad even more.

I have just bought the 2 cup moka pot and I love it. Maybe I am wrong, but It was more than obvious to me that it's not for 2 cups, it's for one great (I mean of great quality) cup of coffee. I also use a French press (yes, it's manual) for milk creme and the result is unbelievably good, much better than Aeroccino's. Thanks a lot for your videos.

It all depends on how much coffee you drink. Us, Italians are use to have small quantities of portion at the time. Maybe we can drink like 10 coffees a day, but usually the portion of coffee used is 6 grams each. But I agree with you, that can make an easy portion for us. French press for frothing milk is my favourite. Thanks so much for the comment and the support

Dohhh - I've been using 13g and 120g of water, which explains a few things (just read the packaging - 90g water). However, totally agree about the basket - drives be mad (first World problems 🙄)

With my C40 grinder I always do this: Place the moka pot basket upside down on top of the bean jar after grinding the beans. They fit perfectly together. Then I shake it, as it seems to be the new meta. After shaking, I turn it upside down so all the grounds fall onto the basket. Then, just tap it a few times on the counter to settle the grounds.

Yep I do the same :). on the 3 cups, but not everybody has a Comandante, so I always need to share a general way to pack the coffee in the best way. But I agree with you method :)

The 2 cup basket also fit perfectly the 1ZPRESSO X-Ultra, it's exactly the same size. And as it is magnetic you can tap it very easily !

Hi Matteo, Thanks for the awesome content - it’s been super helpful! My coffee is coming out at over 80°C. I need help diagnosing the problem. Could the issue be the size of the coffee grind, or am I tapping too much or too little?

At the end the if the coffee tastes good with that temperature keep it as it is. You can use the reference in case change the taste. There is no perfect temperature. But if you think the coffee is a bit over extracted. You can, or grind slightly coarser, or tap less on the counter

Literally I was in the same situation, then I saw E&B Lab making filters for the 2 cups and the fact I was looking for making a stronger coffee made me get the 2 cups. And now I'm in love!

not gonna lie, i have been using a bialetti 6 cup as my daily serving as plain black coffee for one person... for a number of years, probably 15 years now. i thought it was pretty standard as it made a large cup of back coffee. so yes, i have bought a bialetti 2 cup and will probably put the 6 cup in the shelf for a bit.

Do you dilute the resultant coffee with water usually? I suspect a bit of water dilution might bring out the flavours more, rather than it being over-concentrated and/or overwhelming.

It really depends on how you like to drink the coffee. You can dilute it or pour milk. Up to you. The important is to extract well the coffee, so in case you want to drink it as it is or dilute it with water, the extraction is always good. You suspect is correct, you will open up more the flavours

Hi Matteo. What is the percentage of coffe in (ml) you get out of the original amount of water? For example if You used 90 ml of water what would be the final volume of coffee in ml?. Thank you for the great videos

Hi! So that depends on the grind size you using and the coffee you are brewing. Coffee retains water, but not all the coffee retain the same amount of water. Also finer grind size retains more water than coarser. Usually the theory is that for 1 g of coffee 2 g of water is retained. In moka pot a bit less because the pressure pushes more water out. But lets say that is the standard

How many clicks do you use with the commandante?

I usually brew around 12/15 regular clicks, depending on coffee. Starting point always 14. Then, right now I'm editing a video where I use 10 clicks, but I don't want to spoil it more. But yeah 12/15 is my go to grind size

Is aluminum unhealthy? They recommend steel, but it is said that it also changes the taste. Which one do you think is better?

No the aluminium is not unhealthy. Stainless steel is definitely easier to maintain.

Matteo, thanks for all of the informative videos! I have learned a lot about brewing coffee (particularly with the moka pot) in the past 4 months. Have you tried using a Giannini 3006010 model? The pinhole in the side of the funnel releases pressure which lets you adjust the strength of the coffee making it the best moka pot I have tested in my opinion. The semi percolation of the Giannini does have its caveats though…

The Java Jolt I got actually holds a max of 12 grams of coffee, but it states it's a 3 cup. It works well, but definitely is cheaper. I might have to look at one of the Bialetti's I didn't realize there were so many sizes! Thanks for your videos! Been loving making my iced coffee from the moka pot!

Thank you Alex! Yeah, different brands have different standards. The reality is that there no rules for how much is a moka pot cup. Bialetti makes from half cup until 18 cups. Plenty 😂

Use primarily a 4 cup Venus pot so I can share with my wife. When by myself, I go for the 3 cup pot . The ratio matters, but perhaps the type of coffee and roasting method matter just as much as.

Bigger mokas of course are good to share. I do that with the 3 cups. Yes of course the type of coffee, grind size, roasting, it all matters. But with the same coffee, grinding and other variables, changing just the moka, the 2 cups produce the stronger

Interesting video Matteo. I am perfectly happy with the yield and ratio of my 3 cup. Using a 2 cup for my morning ritual would mean I have to make coffee three times :-)

Yeah, I totally understand. I mean I still like the 3 cups, but with the 2 I manage to get the coffee I prefer. But if you like bigger amount, stick with the 3 cups!

Hi, i have both Brikka 2cups-normal-and 4 cups induction..No matter what, the induction DOESN'T make any creme and the coffee released is also boiling..I tried everything even trade the valve between the bricks, same results, meanwhile the 2cup is doing great with both valve..Any sugestions ??

I just bought the 1Zpresso X-Ultra yesterday in prime sales. Don't buy the commandante, it is outdated now. The Kingrinder K6 have the same burr and offers external adjustments for under 100 bucks. The S3 looks nice but doesn't reach espresso grind size. The K6 and X-Ultra are the best bang for buck, both all round grinder. The X-Ultra being more expensive but more qualitative. If you can afford the commandante, check out the 1Zpresso K-Ultra instead.

the C40 has no competitors, but if you want to come to this conclusion empirically, you can start with Chinese coffee grinders, they are very modern )) sooner or later you will buy a C40 (or C60 if the budget allows)

For the past 8 years I've been using a Bialetti Fiammetta 1 cup and it holds 110ml water. It's gotten quite old now and for years I've been looking for the same ratios, but cannot find anything... 😞 I bought the Bialetti Moka Express 2-cup which can hold the same amount of water (110 ml) but the basket is twice the size (too much coffee for me). So I guess looking for a vintage Bialetti Fiammetta! LOL

you can cut 3 cup early i use 20 gr coffee and 80 mil out in 3 cup and 14 coffee and 55-60 mil out in 2 cup

Yes, in fact that is what I used to do. But I like small cup of coffees, so with the 3 cups I was getting too much yield. That's why I love the 2 cups.

Matteo, I'm sorry, since there is some amount of water left in the boiler (and is not involved in the extraction process), is the ratio of coffee to water probably more correct to calculate based on the volume of finished coffee?

Hi! Yes, that is in fact what I do, I always calculate the yield to understand extraction. But you keep consistency, more or less the same amount of coffee comes out based on the amount of water you place. It's like pour over coffee.

I got carried away with the geyser after a deep immersion in Turkish coffee, and there the ratio of water to coffee is taken very literally because 100% of both participate in extraction, so I clarified. The ratio figures are similar, but the meaning is different 🙂

I'm glad I could inspire you, now I have the responsibility to make sure I give you the right suggestions. Grinder in something that people overlook, focussing more on machines. Actually the grinder is the most important tool and where people should focus to invest. I have a Comandante handgrinder, the same you can see in my videos since 2018. And it still amazing! I know it's a bit expensive, but with the years makes you save money, it's also good for espresso and filter coffee. If that is above your budget, you can tell me how much you would like to spend and we can see if we can find a good option.

Hi Matteo, thanks so much for your video. I find it very useful. I have a question about your grinder: which brand and model is your grinder? or which grinder do you recommend to have at home? I always ask for my coffee already ground at my local coffee shop. They grind the coffee in a big König grinder for specialty coffee; they grind my coffee at number 1 for espresso. Thanks in advance.

So I installed the E&B labs filter in my 3 cup pulcina. The flow is much less stable as it is with the supplied filter plus paper filter, and the result is a more bitter coffee. I think the E&B labs filter requires a more course grind? Did not test that yet, but for now I will stick with the original filter and aeropress paper filter

So, yes use coarser grind size, that is the positive thing about that filter. it allows you to grind coarser making you achieve anyway a good extraction. grinding coarser reduce the chances of channelling.

Do you use all the water to brew it? I have a similar moka pot (tough not Bialetti), 130ml water, 13g of coffee and I only get about 45ml of moka in the end. I specifically stop at this mark because if I continue to brew and make a bigger portion it just doesn't taste as good, basically every drop of coffee brewed after about 45ml mark tastes worse than before. Is it different for you?

So, that happens to you because you are using a 1:10 ratio, meaning for 1 g of coffee you use 13 g of water. you can reduce the amount of water in the boiler, I would say 90 g. That might help. Let me know.

Hi Kristina! Welcome and thanks for the compliment. So, I usually put room temperature water when I brew medium dark roast coffee, because they don't need much temperature to be extract well. If I brew light roast, then I need more energy from the water so I put hot water, never boiled, because that can lead to sputtering.

Hi Matteo, many thanks for another excellent and informative video. I'm a big fan of the 1-cup and 3-cup moka pot, but had never seriously considered the 2-cup. However, I've now changed my mind, especially as I see that E&B Lab make a competition filter for the 2-cup. The 2-cup basket is a different diameter to the 3-cup, so I'd appreciate your recommendations for a 2-cup dosing ring. I'd also appreciate your recommendations for a 1-cup moka pot dosing ring; I currently use a Flair Pro 2 metal dosing ring, which is not a perfect fit but just about does the job. Thank you for your continued enthusiasm to promote the moka pot as being capable of making a great cup of coffee. Ciao

So, yes it’s strong because more coffee you place with same amount of water, stronger gets the coffee. The right way depends on the coffee you brewing. For kimbo I would keep 16/120. If it’s too strong for you, add a bit of hot water after you made the coffee to reduce the strength, but in this way you keep the good extraction. If you place less ground coffee, the coffee will be too bitter

@@andi8744 I always start with 14 clicks, then depending on coffee and drainage go slightly finer or coarser, usually is coarser 15 clicks or 12/11 finer. But I usually see with taste and flow.

I say 3 cups. But also depends on how much coffee you like to drink. But for 2 regular espresso cups, 3 cups Moka Pot is perfect.

Hello, may I ask which paper filter did you use? I used to have 2-cups Brikka then switched to the 2-cups Express just to realize they are different in size and none of my Brikkutilitieses fit the Express, including the paper filter. I only found paper filters for 3-6-9 cup moka pot on my region's online marketplace and I am pretty sure that my AeroPress paper won't fit either. Still, as shown in the video the paper you use fits perfectly into the pot, I have been searching for this kind of paper for years and now I finally find it.

Ho Matteo. I have 2cup bialetti induction. My question is..why do you need water room temperature? I put 12gr dark roast, water 85ml, comandante 12 klick and it spits? What do I have to change? Thanks😊

@@matteofromtheswamps when I put around 65-70 celsius it spits faster, when I do 40 it spits anyway but a bit later. Does it really matter water temperature on the beginning? Just looking for the reason why coffee is not comming smooth and slow on the beginnig, like on your video. I tried use filter and no filter. Try different grind size( comandante between 15 and 12) How many klicks do you do on comandante? I do pour over and espresso and its beautiful, but moka pot its so hard to master

@@gregruniewicz3571 Alright, the reason depends on the kind of coffee you are brewing, I made a video about that, here is the link if you are curious to know kzbin.info/www/bejne/poCoYYuEirqhmNE So hotter water lead to sputtering, sputtering occurs when the water in the boiler gets very hot. My suggestion is to remove the moka from the stove as soon as it comes out, let the coffee flow and then gently replace it on the stove. So the water doesn't boil. Regarding the clicks, I usually start with 14 clicks, and then adjust. This depends on the coffee. One month ago I had an Ethiopian coffee that was spitting with 14 clicks since the beginning. That is because African coffee usually are more dense, so the water struggle to pass through. My suggestion in this case is to go coarser, just on click at the time and also when you put the coffee in the basket, tap less on the counter to avoid packing the grinds too much, some coffees are already well dense that you don't need much packing. I hope with this reply I can help you and I'm sure we will find the perfect solution.

Hi Matteo. I have a question for you: have you ever tried brewing coffee in a Cuisinox, 6 cup stainless steel moka pot? It's a beautiful pot aesthetically, but it seems very tricky to brew decent coffee in it due to its design. The steel seems to get too hot. There are times when the coffee is coming out of the spout and when it lands on the bottom of the pot, it begins to sizzle (really hot) and leads to a harsh taste. Do you have any experience with this brand? It would be so cool for you to create a video where you show how to properly brew coffee in this moka pot. Thanks so much. Love the videos.

Hi, thanks for the comment. No I never used that pot but I guess you have the same problem many people have with a 6 cups. Now the metal handle of course is not ideal as you saying because it gets very hot. the trick for the 6 cups is to remove it from the stove often while the coffee comes out because the sputtering is given buy the excessive boiling of the water, removing it from the stove you can calm down the water and the pressure can anyway continue to push the water up, when you replace it on the stove you create more pressure and more water will come out. I actually made a video about 6 cups Moka here on my channel that you can get as reference,

If I had known sooner, I would have bought 2 cup. Now I have a 3 cup and I tried to make it behave like a two cup by reducing the ratio to 1:7 - 1:7.5, the number I always return to.

Honestly with you, me too. I've always been focused on 3 and 6 cups. By curiosity I got a 2 cups and I fell in love. With the 3 cups you can still put less water, important it too keep the coffee in the basket full.

Hi, as a Matteo coffee business consultant and not as Matteo KZbinr, I want to ask you is Moka pot is the only coffee you are serving. Because it will take a bit of time making coffee. But anyway I think you should get a 2 cups for individual serving and probably a 3 cups for a double serving. Also it depends on the cup size you want to serve.

I saw this trend in Thailand where the sell moka pot coffee on coffee cart by the street and I want to try introduce this at my hometown in Malaysia. My plan was to use 2 cup moka pot for 8oz hot coffee and 16oz iced coffee, and 3cup moka pot for 22oz iced coffee.

Hi Matteo. I have a 6 cup pot (its big i know). I want to buy the 3 cup or 2 cup pot. but before that i want to understand if the moka pot coffee is even for me. I want to know what kind of taste can we expect from moka pot coffee? I have used 2 different speciality medium to dark roast coffee to brew in my pot. These are speciality coffee so they have they different tasting notes mentioned. the thing is my coffee is almost always a little sour acidic tasting. So my question is what type of taste can we expext in Moka pot coffee. Can we expect all these tasting notes in our final cup. For context im from india and I haven't had a nice tasting espresso here everrr. Thank you for your content. i really enjoy watching your videos!

Thank you so much for the comment. I'm also drinking specialty coffee the same way you do. So coffee from Moka is something stronger than filter coffee but still less strong than espresso. Even if you like your coffee weaker you can still brew with Moka pot and dilute it with hot water to reduce the intensity. Important is to extract the coffee correctly controlling the brewing variables. Yes you can expect the tasting notes and to avoid sourness you can act on grind size, grinding finer, to balance the acidity, or brewing with more water. Ideally the moka pot is made for medium dark roasted coffee, but you can brew also light roasted coffee.

I really enjoy brewing in my Moka pot even though I haven't been able to brew a nice tasting coffee yet. Was going to reluctantly move to other brewing methods. Ciao Matteo, quale sarebbe la moka pod più leggera che ancora produce buon caffè? Sono appassionato di sci alpinismo e attualmente mi devo portare dietro la bomboletta mini di gas, il pezzo che produce la fiamma (nn so come si dice in italiano..) e la Bialetti brikka R di prima generazione. Il caffè è gradevole ma il peso della Brikka sta sui 500 grammi. Grazie

Ciao, 130 ml é la quantitá di caffé liquido in uscita. Con 150 intendo la quantitá di acqua massima che si puo mettere nella caldaia.

I use a 3 cup Bialetti for myself. Brew the moka, pour all of it into a cup with a heaping teaspoon of sugar. Microwave 1/3 cup of milk or half and half for 30 seconds. Use a hand frother to texture. Pour it into coffee. Faux cappuccino…yummy.

This is the one I use for my milk drink. because I get the best result. It also depends on how big your drink is. But if you drink around 6/8oz the 2 cups is the best one

ciao matteo. video molto interessante. ho la malattia per l'espresso da un paio d'anni e di solito lo faccio a casa con una flair 58 . ho da poco comprato anche un tostino semiprofessionale per potermi tostare i miei caffe da solo. in ogni caso con i tuoi video mi hai fatto venir voglia di una bella moka , se ti va di collaborare ,sono bravo a progettare in 3d ed un paio di stampanti a casa , posso realizzare secondo tue direttive un dosatore che si adatti alla moka.

Hi Matteo, I also use a 51 mm dosing funnel for my 3-cups moka pot. But for my 1-cup and 2-cups, I bought a bunch of cheap plastic funnels from Amazon and cut them to the size of the baskets. It's less stable than a metal one, but it works perfectly.
