Finally, someone that is really good at making a video, and, knows how to make a ton of goodies that are Keto-friendly!! I can't wait to try the egg-nog, that was your first video I watched. I've been keto for 3 years come January. I also put my T2 Diabetes into remission, and lost 30 lbs. Now I'm doing workout/weight-resistance, and really never felt better. I'm 71 in December :)

I made these and had to use regular unflavored gelatin because I could not source the kind in the recipe. They came out crispy with was just fine. I prefer crispy over chewy. You were not kidding when you said the would spread out. They turned into huge cookies. It may be the altitude (2 miles high). Regardless, they will go on a repeat list. We loved them.

I made these a couple of times. I tried allulose and you're right, it doesn't work. It has to be a brown sugar replacement. I also used fine shredded coconut and I like it a lot. Thanks for this! Is now my new staple. I keep them in the freezer.

I made these, I used a cup of keto granola instead of the nuts and coconut and they were divine. Didn’t spread out like yours but still so yum. Will def become a fam favourite.

I just wanted to let you know that these are the best cookies of any kind that my family and I have ever had. I recently had to move to a low carb diet due to health reasons and happened upon your recipe. My wife and kids tried one and now none of us. Pups ever go back to any other chocolate chip cookies. Just made these today and they were pretty good. Even hubby and mom thought so I lowered the sweetener because sometimes it's too heavy but I think the sweetener amount is perfect as your recipe states. I made half a batch to test them and will be making them again.

Hi Carolyn! 👋🐈 Thank you for the double pronunciation of pecan. These cowboy cookies look to yummy to make. I had presumed that pecan was a southern "pah-kahn", yet a lot of Southern say "pee-can". I grew up in Michigan until 6 years old, then moved to Arizona until 17... and out here to Texas ever since (well, 10 years in Oregon). My mum and dad were the best of my young life... and both pronounced pecan as "pah-kahn". I read recently that pronunciation is more of a rural to urban (pah-kahn) rather than Northern to Southern. No matter... it is pronounced as "pah-kahn". 😬🐈

When I was kid One of my greatest pleasures in life was when my mother made my favorite cookies, chocolate chip oatmeal. When I smelled them I could not wait to get to the kitchen. My absolute favorite part was to pour a cold glass of milk and wait for when they got out of the oven. Once out, yes they were hot, but I dunked it the milk and let it drip a bit. Nothing better in life right there

Try make these but instead of coconut flakes add oat fibre which is keto-friendly. Oat fibre is the ground husk of the oat grain and just pure fibre and it still tastes like oats. Just don't use a lot as it is quite absorbent.

Not a good choice in this recipe. It can't replace flaked coconut, which adds texture and chewiness. It will make them dense and awful.

Wow! I have 1 giant cookie that spread out all over the pan and it burned 😩😩 I didn’t have that brown sweetener so I had to use Swerve brown but I doubt that made them spread like that. They are still edible and the sides did get crunchy. Elevation maybe? I’m in the South 🤷🏼♀️

These look sooo good. Unfortunately, we're now in the season where it's too hot to cook, let alone bake. I'll have to wait till late October to try them. Do they freeze well, so that I can make enough to last through the summer? Also, is there any chance you could come up with a keto version if digestive biscuits? Those have been my favourite biscuit since I was really tiny, and I miss them terribly.

They hold together fine without it... it's for chewiness. Add another tbsp of almond flour so they don't spread too much.

The recipe in your book calls for brn. Sugar AND GRANULATED ERYTHRITOL. I’m assuming you just doubled the brown sugar substitute and eliminated the granulated, right?

The new Swerve Brown has allulose so it makes them softer and they brown too quickly. You can use it but you need to watch them and they won't have crispy edges.
