Sometimes I'm very glad and thankful I was born and raised in an Asian culture. Fish heads aren't anything odd or unheard of as a meal item, and it opened me up to food that many would find strange. Many westerners don't understand how delicious fish heads are. If you can get it with the collars still attached, it becomes something I would even arguably trade for all the high quality belly meat the fish has. It has a range of flavors and textures that are amazing. The cheek meat is tender and juicy, the eyes basically taste like pure fat which, if you like fish, is something you'll love. The connective material and meat between and above the eyes are very oily and delicious, and the portions of meat connecting the head to the body tend to be very firm and darker. It makes for a much deeper flavor and offset to the oily and gelatinous bits. It's nice to mix the softer melt in your mouth oily bits of fish head with the much firmer and dense meat surrounding the neck area.

@Jacky Phantom Nope. It has been in Malaysia longer. Singapore was part of Malaysia before, so therefore many Singapore dishes originated from Malaysia. Chicken rice, laksa, fish head curry, bak kut teh, and many more food originated in Malaysia as stall food and made it into restaurants in all major cities in Malaysia and Singapore.

Mark.. This is one of the famous fish head curry in Kuala Lumpur.. Most famous and most cheapest in Malaysia... Anuar is very friendly...we called it Hand Curry... Because the curry smell will stuck on your hand until tomorrow even you wash it with soap....
