Chicken stir fry is a great option for low budget. Ours is fairly basic with chicken, onion, garlic, carrots, peppers and broccoli. Add in some soy sauce and thicken with a corn starch slurry at the end. Served over rice! Eat it in the summer and you can add sugar peas and zucchini straight from the garden without adding cost. The chicken stretches great in this recipe to keep cost down! Thanks for the recipe ideas!

One day I didn't have enough peppers to make stuffed peppers, so I decided to make a Stuffed Pepper Casserole. I used a lb. of ground turkey, 1 onion, about 2-3 cups of brown rice, and 3-4 poblano peppers (my family prefers these over bell peppers). Brown the meat with onions and poblano peppers, add in seasonings (garlic, onion powder, salt, pepper). Mix in rice and place in a casserole dish and top with cheese and bake until cheese is melted. its really good and really stretches to feed my family with leftovers!

Just found your channel and I absolutely love it! I also have 7 children and also feed myself as well as my husband and father in law every day. One thing I grew up on was country hash Fry cubed potatoes in bacon grease with onion and garlic, add green pepper and any seasoning you like we did salt pepper and worcestershire. Add what ever meat you have on hand, bacon sausage or ham When everything is hot through, you scramble your eggs right in with everything else. Serve it with homemade toasted bread with homemade strawberry jam. Delicious and can stretch to feed as many people as you need it to

When I prep stuff to freeze. I put it in ice cube trays then when they are frozen I pop them in a bag. For example I chop up kale real fine so I can sneak it in food. I put it in the trays then put melted coconut oil in with it. It keeps it together. I do the same with green onions. I also juice lemons and oranges when I have a lot or I know they are going to go bad soon, then pour it in the ice cube trays.

One tip about salt. Most people and recipes use too little salt. If a recipe tastes "off" you need to add more salt. American's have become afraid of using salt and it's making everything taste bad!

I think it is because of the prepared food phenomenon... most contain a lot of salt, but it isn't sea salt containing minerals, it is usually Morton's or some other kind of brand that strips all of the natural minerals out (I think they can sell those minerals to other companies?) and you are left with pure salt, which is hard on the body. So the general paradigm in the US is that salt is bad for you, but I believe if you use sea salt, complete with all of the 60+ trace minerals contained therein, you will not incur negative health results. I put a little sea salt in my water bottle in the morning to grab those minerals that we no longer get from food. It has all of those electrolytes that your body needs, without having to drink Gatoraide, which is basically crap sugar.

Yes. And they substitute salt with Pepper and hot sauces. The true flavor if food is lost. This goes for restaurans especially. You order a meal for 10.00 let's say. The restaurant gets a very cheap cut of meat something that my dog would get sick on. They douce it with Pepper, Siracha, other hot sauces. Marinate them in that add a little lemon juice to help break down the fibers in the cheap cut if meat. Cook it up and restaurans make a mint. You are paying for inferior meat hidden by pepper, Siracha or ithwr very hot spices. Yes,I know that it is a tradition in a lot of countries but let's think about it. Those places had inferior cuts of meat. They had to use what was available to them. How did they cover up the flavor or texture, add hot spices. Salt enhances flavor, pepper and hot sauces hide flavor or alter it completely. Just some food for thought.

Living On A Dime unless you're using quality salt like Pink Himalayan salt, adding more salt to meals is seriously unhealthy. A diet high in sodium is just a no no. Herbs and spices can add plenty of flavour without the health implications.

Here's one of our frugal family faves: Chicken Tortilla Soup--When I have leftover chicken, I shred it and put in a Crock Pot...add a large jar of salsa (extra points if you've got your own canned ;) )...a can (or home canned jar) of beans (chili/pinto/great northern, etc.) and, if I'm feeling generous, a cup or so of frozen corn kernels. Add your favorite seasonings like cumin, paprika, a bit of salt, pepper, oregano, garlic powder, etc. Cook on low for a few hours or on high for a shorter amount of time. You may like a bit of shredded cheese, jalapenos, crushed tortilla chips, or sour cream on each serving. Serve with corn bread or grilled cheese. Mmmmmm--we like this especially in winter.

Hi just curious if you are small portion eaters? I barely have leftovers when I make a pound of pasta for 4 people... Lol. My kids love a recipe in the crockpot with chicken thighs 1 tsp each onion powder garlic powder basil parsley and salt and 1-2 tsp pepper and one can chicken broth. Cook on high 4 hours and shred then add 1 block cream cheese 1/2 cup cream and 1/2 c Parmesan cheese and cook on low for an hour to combine. I serve over rice. God Bless!

I have two recipes I think are low cost. 1st is chicken and corn soup and the 2nd is chicken pot pie (this is not done in a pie pan) When I make these I will cook up a whole chicken and use the water that the chicken was cooked in. To make the chicken and corn soup you need some chicken, I don't have a set amount that I put in, just go by how ever much you want. 1 hard boiled egg and a large bag of corn( or two small bags of freeze corn) you can use fresh corn to. You would need to take it off the cob. If using a whole chicken cook in a large pot cover with water for 2 to 3 hours with salt and peeper. Cover the pot to cook. Once it starts to boil turn down and simmer. Take chicken out after cooking and set aside. Add 1 medium onion diced up to broth and corn. Cook together for 1 hour. Put pieces of chicken in the broth. Add 1 hard boiled egg cut up. Next you want to make rivals. To make rivals you need 1 cup of flour and 1 egg. mix together until pea size balls of dough form. Get broth to a really hard boil and add handful of rivals at a time and stir good before adding more. Cook at a hard boil for 10 min. Then enjoy. The chicken pot pie is 6 to 7 cups of broth, 2 1/2 cups flour, 1 tsp salt, 2 eggs and some shedder chicken. First you want to mix the flour, salt together. Put the two eggs in a measuring cup and beat. Then add water until it reaches 1 cup. Pour into flour and salt mixture. mix until forms into a dough. On a while flour surface( you will use a lot of flour, so it doesn't not stick to counter. Then you roll the dough out to about 1/4 in thick. cut the dough with a knife ( I use a pizza cutter) to form dough squares about 1 1/2" to 2". If to big will take longer time to cook. I put my dough squares on a cookie sheet cover with wax paper. put dough single levels on cookie sheet and cover with flour. I do this until you cant see the dough squares. Let set at least 2 hours to air dry. You can make the dough squares the day before. To make bring the broth to a hard boil and add dough squares one at a time. After you put in each piece push down and away from were you are adding more pieces. Cook for at least an hour. ( It takes longer for me to cook the dough pieces I live at high altitude.) It can take longer then an hour. Take a piece out and taste to see if done. Add parsley, salt and pepper to taste. While dough is cooking. After dough is cooked add the shedder pieces of chicken and cook until chicken is warm. you can put on plate or in a bowl eat pot pie. You can use beef and beef broth in place of chicken. We are a family of 6, this gives us at least to meals on both the chicken and corn soup and chicken pot pie. You can freeze the leftover chicken and corn soup.

Recently I threw a birthday party for my littlest, I wanted to feed everybody dinner but had very little money. I made meatball subs with chips. Bout frozen meatballs, spaghetti sauce, mozzarella cheese, hot dog buns, and chips. I fed about 25 people for around $15! It was great and everybody loved it! Also easy since I just cooked the meatballs and sauce in the crockpot all day.

Tammz K When we heat the thawed chili for spaghetti we simply make the pasta as normal. For tacos its the filling and we add the tomato, green diced onion cheese etc like one would do when putting a taco together. For sloppy joes its the sloppy joe between the buns. Same with chili mac and cheese, simply cook the elbow noodles add the chili favorite shredded cheese et.

Chicken and dumplings are a favorite cheap easy meal around here. I do use a couple of things y'all probably wouldn't-chicken bullion, and peppered gravy mix. BUT, a very good and almost as easy recipe would be: In the morning, put thawed chicken thighs in crockpot with a generous amount of water or broth. Add salt, thyme, sage and pepper, and cook on high till chicken is falling off the bone. Take chicken out, debone and return only meat chunks to crockpot. Make recipe of homemade biscuits, and cut small(1 inch pieces) with a pizza cutter. Place the dough pieces into simmering crockpot water, and put lid on. Let it simmer till you are ready. Add cream to each bowl when serving, and adjust seasonings to taste.

Thank you for real ideas. Long story short, we have food allergies in our household so the garbage in a box is really a bad thing. I cook from scratch all the time. It really is safer, healthier and more cost effective in the long run. I am known for turning leftovers into something new. I Like to get large roast and cook them and then do; roast with potatoes and veggies one night, pulled pork, or beef tacos the next night (depending on what kind of meat it is), or just a stir-fry with veggies and rice. Our household population is only two people but other small families might like the ideas.

I like the udon noodles with the vegetables you described, then to make it a meal instead of a side dish. Shred chicken breast (one breast will feed the whole family for this recipe-yes family of 9 or 10). Add peanut butter (this is going to help the chicken spread further, as it's protein and fat and so filling). Soy sauce. A little brown sugar. If you have sesame oil that's great too. If you don't no big deal. And a few scrambled eggs. I like at least one scrambled egg per every 2 people. (again protein/fat in eggs will help you use less actual chicken), I add a little soy sauce, and sesame oil to the eggs when I scramble them. I would also use 2 packages of the udon noodles like you said for a main dish. You can top with a little chili pepper if you like.. if not leave it out.

So, we enjoy almost weekly Barbecue Sheppard's Pie.. Simple and easy with leftovers for my wife and I to take to work the next day. It's super simple and tastes awesome! 1lb ground meat (your choice, we've tried this with ground beef/chicken/pork/rabbit - it's all good). Mashed potatoes (made with real potatoes - It's so much better/tastier than flaked boxed garbage) - the amount depends on how far you want to stretch it (for a family of three we use around 6 potatoes). Veg - Either canned corn or peas (or both!) - again the amount is for how far you want to stretch it. Preferred BBQ Sauce (we use Kraft, because it has no corn syrup in it) - Amount will vary. Cheddar Cheese - amount to your preference. So, cook meat, drain, then add can corn/peas and enough BBQ sauce for your preference to cover the bottom of your bread loaf pan / 9x9 / or full blown 9x16 (the larger the pan, the more corn/peas/BBQ sauce you'll need to put in it. You want the mix to look kind of like sloppy joe/manwich thickness. Make your mash at the same time. Boil potatoes until done. Mash (add your preferential seasonings - I prefer ranch dressing) - Again make as much as you need to cover the bottom layer on the pan at least 1 inch. Cheese - you can do this two different ways - Before or After Baking. Before - if you have sliced cheese it will be layed out under the potato layer. Or After which is a part of description below. first BBQ/Veg layer will be added to the bottom of the pan, then the potato layer. Bake in the oven for 20 minutes at 350. Open the oven and cover with a layer of shredded cheddar. Return to oven for 10 more minutes. Pull from oven and serve. Sounds lame, but it's a great meal. Respectfully, BreakAwayHomesteader

Essem Sween I agree! I tried a recipe once asking for a can of cream soup & no one in my family could eat it, it was incredibly bland & such a let down after taking the time cooking it, not to mention I was very upset at the cost I'd wasted! I am curious about the glass you were sipping from. I need to fix one up for myself to avoid using plastic water bottles, but enclosed so my furry critters don't think it is their water bowl. I really try to avoid pasta , cream sauces , and starch vegetables from our diet. I will have to check out your recipes further to see if anything fits for me.. I try to serve at least 50% of our meal as a fresh vegetable depending what is in season or what I have in the canning closet.

great video. your cookbook looks like mine even the tab named. I had to start dividing them into different binders. lol the recipes you called out I have also except the dry mixes you were talking about. do you have a video on those? I didn't think how much I was saving too by making things from scratch until you broke it down. do you guys have a recipe for canned BBQ sauce? that's more savings too. I canned 8 pints a couple months ago. or maybe making homemade noodles are good too.thanks for sharing.

I used to make a pasta dish when on very low income.. it's NOT a looker.. but pan fry mushrooms, onions and garlic.... add chopped tomatoes... .. add cream cheese till it melts... garnish with fresh cut parsley/chives/whatever suits you and eat with cooked pasta... .. my kid didn't like mushrooms.. so I just chopped them very fine.. he didn't notice :-) because of the tomatoes it turns .. pinkish.. again.. not a looker.. but still yum

can you take same pictures of the finished recipe and how much you feed your family as my family of 4 eats 750-900g of pasta for spaghetti etc with leftovers sometimes ( we serve salad with spaghetti and sometimes bread). a 500g pkg isn't enough and some of our pkgs are 900 or 750 when I use the 900 one I purposely cook it to have planned leftovers for lunches etc.

Macaroni and bacon bake (I'm Australian, so measurements are metric...1 tbsp=20ml, 1 cup=250ml) 350g macaroni, cooked 2 leeks, chopped 6 rashers shortcut bacon 2 tbsp butter 2 tbsp flour 2 1/2 cups milk 100g cheddar cheese 1/2 cup sour cream 20g grated Parmesan cheese 20g breadcrumbs Pinch of cayenne pepper Serves 6 Preheat oven to 180° C. Sauté leeks, bacon and butter until the leeks soften. Stir in the flour. Take of the heat and slowly (to avoid lumps) stir in the milk. Put back on the heat and bring to the boil. Stir in cheddar cheese and sour cream and turn off the heat once melted. Put macaroni in an oven proof dish of an appropriate size. Pour the source over (you can stir the two together if you wish). Combine Parmesan cheese, breadcrumbs and cayenne pepper and sprinkle over. Bake for 30-40 minutes. This cooked recipe is also suitable for the freezer.

I have done some of these things for most of my (Southern) life, however I am gluten intolerant and thank God I now know that after years of being sick. what do you offer for someone like me?
@Bigfamilyhomestead
@Bigfamilyhomestead 8 жыл бұрын
Sorry Nanny, don't know much about gluten free. It's funny though, I know that the commercial food system kills pretty much all of the nutrition in most store bought food as a trade off for shelf-stable and predictable behavior, most of the friends that we have that say they are lactose intolerant can (and love) our raw unprocessed milk without any digestive issues... I wonder if it's because all of the enzymes and "stuff "that makes food good for our bodies is killed out of it by big food producers???? Just thinking...

Now fast forward a year after being angry that No one really ever ate - i make simple, cheap but healthy dinners cut my bill in half and everyone eats. Imagine that!!
