I've heard differently. Apparently in French, an idiom for a rolling boil is that the pot is "laughing." That's not what you want here, you want just a bare simmer, so instead of a laugh you want a smile.

Thank you for inspiring my 13 year old Abram. Being a Star Wars/Mandalorian fan, he decided he wanted to try making Bone Broth. He did it all by himself. He would get up in the morning before anyone else and he would do each step. Our house smelled wonderful and he was pretty proud of himself when he finished. Since we’ve been quarantined, not much gets him away from video games and KZbin. So again I say thank you for inspiring him.

Reason it's giving an off metallic taste is becaause you're not soaking the bone and marrow in water to get rid of the excess blood/iron taste.
@Slothbop4 жыл бұрын
How long should you do that for approximately? Thanks for the info!
@arklytte4 жыл бұрын
I'm glad someone brought this up, because as good as bone broth is the way Andrew made it, making it with the marrow will BLOW YOUR MIND! I have made literal barrels full of bone broth over the years (I'm a retired chef), and I have made it both ways (as well as the traditional French was, with veal bones), and there is no contest which way is better. The marrow just adds this extra layer of 'unctuousness' to the broth that is out of this world. One caveat though, you want *lightly salted* water, rather than just plain water. It helps draw out the blood/myoglobin and also helps add some flavor to the bones themselves. Use about one heaping teaspoon of salt per quart of water, and use enough water to just cover the bones. 12-18 hours should do it, and make sure to rinse them thoroughly afterward, then proceed just as Andrew showed. You're in for some pure heaven in a bowl after that!

They reused old sausages rat feces along with rats themselves, peoples fingers got sliced off and into the meat for the sausages and people who worked in the factories had stubs for finger from accidents and the acid wearing away at their flesh. I didn’t wanna watch this cuz I’ve never seen the Mandalorian but this is now one of my favorite episodes. It was just so well executed. Of course the recipe was just for soup broth but he took it and not only Babishfied it, but made like four other dishes to show the strength of it. And he sounded so excited about how they all turned. I never would’ve thought savory whipped cream was a thing until now. He also gave plenty of nice nutritional facts about the broth and how healthy it can be. The video was sponsored by a partner that he seems to favor very much (I know by now he’s a coffee guy so I believe it) and of course to top it there’s an adorable fun and loving moment in freaking out Jess with chicken feet. And of course all the Star Wars jokes and pop ups. Just amazing work Andrew

Food safety. If you get a sketchy butcher they may just fish them out of a trash can/bone disposal bin for you or give you ones they have left sitting out for hours because they didn't bother to clean them up after cutting the beef off them.
